Mini filled brioches

These small brioches will become the favorite breakfast of adults and children alike; the soft, fragrant dough and their deliciousness make them unique.

They can be prepared by hand or in any food processor or bread machine — making them will be a piece of cake.

Great for breakfast, they are also suitable for children’s snacks and to take to school. You can enjoy them plain or fill them as you prefer with the help of a piping bag or simply by cutting them in half.

MINI BRIOCHES

Ingredients

  • 2 1/8 cups 00 flour
  • 3/4 cup Whole milk
  • 7 tbsp Butter
  • 1/3 cup Sugar
  • 3 Eggs (at room temperature)
  • 1/2 tsp Fresh baker's yeast (approximately 5 g (about 1/2 tsp active dry yeast))
  • 1 pinch Salt

Preparation

  • In a bowl, if working by hand, or in the bowl of the food processor, pour the flour, sugar, salt, 2 eggs and the butter at room temperature. Meanwhile, gently warm the milk in a small saucepan (or in the microwave) and dissolve the yeast in it.

    At this point, pour the milk with the dissolved yeast over the flour and the other ingredients.

    Mix the ingredients well with a spoon or by running the food processor until you obtain a smooth, homogeneous dough. Shape it into a ball, place it in a bowl and let it rise covered with a cloth until it doubles in volume (this will take about two and a half hours, but it depends on the season and room temperature). After the resting time, shape the dough into small brioches. You can proceed as you prefer: either form small balls, cones, or roll triangles cut from rolled dough from the wider side toward the point. At this point place them on a baking sheet lined with parchment paper and let them rise again for a couple of hours or until they almost double in volume. Brush the surface with a beaten egg and bake at 356°F in a conventional oven for about 25–30 minutes until the surface is golden.

    Remove from the oven and let cool on a rack. Your little brioches are ready!

Notes

You can serve them simply dusted with a little powdered sugar or fill them as you wish with jam, pastry cream or hazelnut cream. If you make a large quantity, they can be easily frozen and taken out for every indulgent “need”.
