- 8 slices bread (white or whole grain sandwich bread)
- 5.3 oz Mortadella Bologna (thinly sliced)
- 2 cheese (fresh goat cheese)
- 1.4 oz Bronte DOP pistachios (toasted)

Steps
Place the goat cheese in a bowl and work it with a hand mixer or fork until creamy.
Add the chopped pistachios and mix.
For a crunchy Sandwich, you can slightly toast the bread slices in the oven or on a griddle, or you can fill them directly.
Spread a generous layer of goat cheese and pistachio cream evenly over each slice of bread, place slices of Mortadella Bologna on each, then close the Mini Sandwiches with the other slice of bread.
If not consumed within half an hour, store them in the refrigerator.
When serving, cut the bread slices in half diagonally. If desired, you can decorate the surface with a dollop of goat cheese cream and pistachio crumbs.

BREAD You can use sandwich bread, either white or whole grain, or replace it with crustless bread. Toasting the bread before filling is not mandatory, although doing so allows you to appreciate the contrast between the crunchy bread and the soft, creamy filling.
GOAT CHEESE If you don’t like the strong taste of goat cheese, you can replace it with cow’s milk ricotta or fresh spreadable cheese.

Spread two slices of bread with mayonnaise, place lettuce leaves on top, add sliced tomatoes, sliced mozzarella, sliced hard-boiled egg, and cover with the other slice of bread.
Mini SALMON SANDWICH
Spread two slices of bread with mayonnaise, place smoked salmon on one, then lettuce and sliced tomato, finally add sliced hard-boiled egg. Cover with the other slice of bread and press lightly.
Mini HAM AND CHEESE SANDWICH
Spread two slices of bread with mayonnaise, place in order: sliced ham, lettuce, sliced tomatoes, more ham, and finally sliced Edamer cheese. Cover with the other slice of bread and let rest in the fridge for 30 minutes to better enhance flavors.
