NO-BAKE APPLE AND CHOCOLATE CAKE
The clever NO-BAKE Apple and Chocolate Cake is a super delicious dessert made with only two ingredients: apples and chocolate, containing neither flour, butter, nor eggs.
A soft texture that melts in your mouth for this very easy-to-make dessert, perfect as an energy breakfast or a healthy and genuine snack.
To prepare it, you will only need Dark Chocolate (I used 75% EXTRA DARK as it’s lactose-free) and apples. Then you can decide whether to use a round mold and serve it as a cake or a square one and cut it into small squares for a sweet treat after dinner or a snack during the day.
A gluten-free, butter-free, and flour-free cake, suitable for everyone, whether you need to follow a diet or are intolerant to these ingredients.

Ingredients
- 10 oz Golden Delicious apples (net of waste)
- 7 oz 75% dark chocolate
- 3.5 tbsp water
- unsweetened cocoa powder (optional for decoration)

Steps
Peel the apples and cut them into pieces (they should weigh 10 oz net of waste). Place them in a microwave-safe container with about 3.5 tbsp of water and cook at maximum power for about 4 or 5 minutes. Alternatively, you can bake them in a preheated static oven at 356°F (180°C) for 25/30 minutes or put them in a saucepan with a lid. Meanwhile, roughly chop the chocolate and melt it in a double boiler or microwave.
When the apples are ready, transfer them to the blender and blend until they turn into a puree. Add the previously melted chocolate and blend again until you get a smooth and homogeneous mixture. Transfer to a mold (mine is square measuring 6×6 inches) lined with parchment paper, or use a silicone mold or small individual molds. Place in the refrigerator to firm up for about 3 hours. Take it out of the fridge a few minutes before serving so it returns to the right consistency and creaminess. Dust with unsweetened cocoa powder.
NOTES
APPLES I used Golden apples, but you can change the type as long as they are not mealy (like Reinette apples). Make sure to cut them into small, even-sized pieces so they cook more quickly and evenly. They should become tender.
CHOCOLATE In the recipe, 75% Extra Dark Chocolate is used because I don’t like overly sweet flavors and because it’s lactose-free. Feel free to use the chocolate you prefer, either dark with a lower percentage or milk chocolate for a sweeter taste. Leftover Easter egg chocolate works great too.
FLAVORINGS In my opinion, the cake is already complete as is and doesn’t need anything else, but if you prefer a more aromatic flavor, you can add a pinch of cinnamon to the apples while they cook or vanilla extract to the mixture.
BAKING PAN Depending on whether you want to serve this dessert as a cake or as a ‘snack,’ use a round or rectangular baking pan. Make sure to line it with parchment paper to easily remove the dessert once ready.
STORAGE
The No-Bake Apple and Chocolate Cake can be stored in the refrigerator in an airtight container for up to 1 week. I recommend taking it out of the refrigerator at least 15 minutes before consuming it to bring it back to the right creaminess.
