ORECCHIETTE with broccoli and sausage is a rich and hearty first course with which you can make even those who usually don’t enjoy this vegetable appreciate it.
Two ingredients that pair perfectly together with a pasta shape, the orecchiette, that embrace this sauce in a winning way to create a succulent dish.
An easy and quick recipe to prepare for lunch or dinner for the whole family that, being a balanced dish, with the presence of both vegetables, proteins, and carbohydrates, can easily be considered a one-pot meal.
If you like a bit of a spicy kick, you can add chili pepper, fresh or powdered, to sauté with the garlic at the beginning of the preparation.
To make the orecchiette tastier, I recommend cooking them in the same water where the broccoli boiled, just like in the orecchiette with turnip tops recipe.

Ingredients
- 11 oz orecchiette
- 10.5 oz broccoli
- 1.5 fl oz white wine
- 10.5 oz sausage
- garlic (1 clove)
- 1 sprig thyme
- 2 tbsp extra virgin olive oil
- 1 sprig rosemary
- to taste black pepper

Steps
Clean the broccoli, detach the florets and divide them into 4, then cook them in a pot with boiling water for about 5/6 minutes.
Score the sausage, remove the casing, and then crumble it with a fork on a plate.
Chop the rosemary and thyme finely together and set them aside.
In a non-stick pan, sauté the garlic clove with two tablespoons of extra virgin olive oil, add the sausage, brown for 2 minutes, then add the chopped thyme and rosemary.
Pour in the white wine, let it evaporate until the alcohol has evaporated.
Meanwhile, the broccoli will have cooked, drain them from the water (but do not discard it) and add them to the pan where you cooked the sausage.
Mix, remove the garlic, and continue to cook for another 5 minutes. Adjust salt and pepper.
Put the pot with the water in which the broccoli was cooked back on the stove, bring it to a boil, then add the orecchiette and cook them for the time indicated on the package.
As soon as the pasta is cooked, transfer it to the pan with the broccoli and sausage sauce, mix, add a tablespoon of pasta cooking water, and toss for a couple of minutes.
Now you can serve, adding a sprinkle of grated Parmesan cheese and freshly ground black pepper to taste.

ORECCHIETTE with broccoli and sausage should be consumed immediately once ready, but if you have leftover sauce, you can store it in a closed jar in the refrigerator for up to 1 day.
TIPS
If you like spicy flavors, you can add chopped fresh chili pepper to the sauce.
The broccoli and sausage sauce, besides being a great sauce, can be considered a complete second course in larger portions, as it contains both vegetables and proteins.
