Ingredients
- 3 1/4 cups all-purpose flour
- 1 cup cup milk
- 2 tablespoons extra virgin olive oil (about 2 tablespoons)
- 1 packet baking powder for desserts
- 30 g sugar (optional: see note at the end of the recipe)
- 1/2 teaspoon fine salt
- 9 oz Nutella® (or pistachio cream, custard, jam)

Steps
To prepare the dough for the Pan Fried Focaccia, place in a bowl: sifted flour with baking powder, sugar (optional), and a pinch of salt, and mix with a fork. Add milk and oil and continue mixing with a fork until the dough becomes consistent.
Transfer the dough to a lightly floured work surface and knead it until it forms a smooth and homogeneous dough ball. Let the dough rest for 10 minutes. The rest is not for rising since it’s an instant rising dough but only to make it more pliable and easier to roll out. Now divide the dough in half and roll it out with a rolling pin to obtain two sheets the diameter of the pan (9.5 inches in my case).
Lightly grease the non-stick pan and place one of the two sheets on top. Fill with a generous layer of Nutella (or other spread) and cover with the second sheet of dough. Seal the edges well so that the focaccia does not open during cooking by sealing them with your fingers or a fork.
Place the pan on medium-low heat, cover with a lid, and cook for about 4-5 minutes. Check the cooking, and as soon as you smell a slight “burnt” odor, open the lid and slide the focaccia onto a plate. Put the pan back on the heat, add another splash of oil to prevent sticking, and cook the focaccia, still with the lid on, from the other side for 4-5 minutes. Once cooked on both sides, your PAN FRIED FOCACCIA filled with NUTELLA is ready!
NOTES AND TIPS
SUGAR: Given the presence of Nutella inside, which is already quite sweet, I preferred not to include sugar in the dough. However, if you want to replace the filling with, for example, jam or custard and you love particularly sweet flavors, add 30 g of sugar to the dough.
NUTELLA: You can vary the filling using any other spreadable cream (pistachio, almond) or fruit jams (apricot, strawberry, blueberry) or custard.
VARIATIONS: Starting from this basic recipe and not adding sugar to the dough, you can also create an excellent SAVORY PAN FRIED FOCACCIA. For example, it can be filled with sautéed spinach or greens, or with mozzarella and tomato, or even ham and cheese, or with whatever you conveniently have on hand. For the savory version, replace baking powder with instant yeast for savory pies in equal amounts.
TIPS: To flip the Pan Fried Focaccia, you can use either a plate or a pan lid.

COOKING PAN FRIED FOCACCIA … IN THE OVEN!
If you prefer and don’t feel particularly skilled with the pan or perhaps are afraid of burning the Pan Fried Focaccia, you can also bake it in the oven at 350 degrees Fahrenheit, static mode, for about 30 minutes.
COOKING PAN FRIED FOCACCIA … IN THE AIR FRYER
If you love the air fryer and would like to use it for any recipe, don’t worry, you can do it in this case too! Note that the cooking times of the air fryer compared to the traditional oven are normally reduced by about 10-20 degrees, and that the cooking times are also shorter (by about 20-25%). Therefore, to cook the Pan Fried Focaccia in the air fryer, set the temperature to 320 degrees Fahrenheit and cook the focaccia for about 5-6 minutes. Of course, I recommend always checking the food halfway through cooking to avoid overcooking or undercooking it.
STORAGE
My advice is to prepare the stuffed pan focaccia at the moment because it’s much better freshly made. If any is left over, you can store it in the fridge for up to 1 day. Warm it slightly before enjoying it again.
