If you want a cold appetizer without cooking that is easy and quick to prepare, the PINWHEELS with sandwich bread are just what you need.

Ideal with an aperitif as an alternative to classic canapés or triangular sandwiches, to be served at a buffet or as a snack during the day, the pinwheel sandwiches with Roast Turkey and Tuna Sauce are a very simple cold appetizer, no-cook and ready in just a few minutes that you can also assemble in advance.

Good all year round but especially during summer when you don’t feel like cooking much, they can also save you a quick last-minute lunch.

There are endless possibilities to fill these delicious Sliced Bread Sandwiches today I decided to use as filling: Roast Turkey, Tuna Sauce, and Lettuce, and toasted pine nuts for decoration, but you can customize the Pinwheel Sandwiches in a thousand different ways using any cold cut and accompanying sauce, adding cheese and/or herbs.

I recommend making the Homemade Tuna Sauce for an even better result (the complete recipe can be found HERE) but if you really don’t feel like it or time is tight, the ready-made one from the supermarket is just fine. Add a can of tuna in oil and mix, you will see that with a small gesture the improvement will be incredible.

Besides, you can prepare the Pinwheel Sandwiches in advance and leave them in the fridge until it’s time to serve them.

Beautiful to present for their characteristic spiral shape that vaguely resembles Sushi bites, they are at the same time tasty but delicate, these funny pinwheels become the right choice even when you have unexpected guests and you want to serve them something good and tasty.

Ingredients

  • 2 slices sandwich bread
  • 3.5 oz turkey (roasted thinly sliced or cooked ham)
  • 3.5 oz tuna sauce
  • 0.7 oz pine nuts (toasted)
  • 1.8 oz lettuce

Steps

  • Wash the lettuce and gently dry it with a paper towel. Lightly toast the pine nuts in a non-stick pan. Prepare the tuna sauce following this recipe HERE. Otherwise, if you are using the ready-made one from the supermarket, pour it into a bowl and crumble in a drained can of tuna in oil. Mix to combine. Leave in the fridge until use.

  • Take the two slices of white bread and slightly overlap them on the long side on a cutting board or work surface. Roll them with a rolling pin so that they thin out and stick together. Spread a generous layer of Tuna Sauce and keep a little aside for decoration. Distribute some lettuce leaves.

  • Starting from one of the long sides of the rectangle, roll the bread pinwheel onto itself to form a roll and then wrap it with plastic wrap. Let it rest in the fridge for about 10 minutes. Then remove the wrap, take the remaining Tuna Sauce and spread it on the surface of the roll. Sprinkle some toasted pine nuts on top. Cut the roll into slices of about 3/4 inch. Serve the pinwheels arranged on a serving plate or leave in the fridge until ready to serve.

NOTES

SANDWICH BREAD for this recipe I used crustless white sandwich bread because it’s softer and less dry than regular toast bread. However, if you can’t find it, you can replace it with the latter by trimming the outer edges on all four sides. To prevent it from drying out when you store it in the fridge for resting, wrap it first in a slightly dampened paper towel with water before sealing it in plastic wrap.

FILLING These pinwheel sandwiches lend themselves to endless variations. Use the cold cuts you prefer and pair them with different sauces. Some examples: Cooked Ham with tartar sauce, Salmon and spreadable cheese, Salami and Olive Paté, Prosciutto and Mayonnaise. To make it richer, you can also flavor the spreadable cheese with herbs.

STORAGE

Pinwheel Sandwiches can be prepared in advance and stored in the fridge, sealed in an airtight container for a maximum of 2 days.
