PORRIDGE OVERNIGHT OATS BLUEBERRY CHEESECAKE
Today I present you with this recipe for a Breakfast of Oat Flakes, Milk, and Greek Yogurt, a kind of Porridge that is prepared in no time, rich in energy and flavor, the PORRIDGE OVERNIGHT OATS with BLUEBERRY CHEESECAKE flavor.
A nice cup of this dessert of Anglo-Saxon origin and we will be ready to face the challenges of the day whether at the office, school, at home for housework, or, for those who can afford it, for being tourists in villages and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that requires no cooking, perfect for those with little time or who don’t feel like cooking. It is prepared in advance, usually the night before, left in the fridge overnight, and in the morning it is ready to be enjoyed with the topping of your choice.
An extremely easy recipe: the oat flakes are mixed together with milk or water, Greek yogurt, flavored as desired with vanilla, and sweetened with honey. Once mixed, there will be no need to cook it; it will simply be placed in the fridge to rest for at least 4 hours, preferably overnight.
Once ready, you will only need to choose whether or not to layer it with yogurt of your favorite flavor, spreads, and garnish it with the Topping you prefer because there are endless delicious possibilities.
In today’s recipe, I created a first layer with the Porridge, a second by adding crumbled cookies (I used Digestive), a third layer of Greek blueberry yogurt, and finished with blueberry jam. This combination will remind you of the famous Cheesecake!
You will see how this no-cook Porridge cup will satisfy you, without weighing you down too much, for a long time and you will reach lunch without that annoying feeling of hunger.

Ingredients
- 1/2 cup oat flakes
- 1/3 cup water (or plant-based drink or cow's milk)
- 1 tsp honey (or maple syrup)
- 1/2 cup 0% fat Greek yogurt
- 2 Digestive cookies
- 1/4 cup blueberry Greek yogurt
- 1/8 cup blueberry jam
- blueberries

Steps
In a bowl, mix oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based drink) together until combined. Transfer the mixture into a single-serving cup and refrigerate for at least 4 hours, preferably overnight.
After resting and before consuming, finish the preparation. Crumble the cookies with a rolling pin or in a mixer and distribute them over the Oat layer. Pour the blueberry yogurt on top and smooth it with the back of a spoon.
As the last layer, quickly work the Blueberry jam with a spoon to soften it and then pour it evenly over the Yogurt layer. Smooth it with the back of a spoon and decorate with some fresh blueberries and a mint leaf as desired.
NOTES
WATER For an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based drink (soy, almond, oat, rice).
HONEY You can replace honey with maple syrup or sweetener for a light version.
COOKIES: The most suitable cookies are Digestives, typical for preparing Cheesecake, but any other type of shortbread cookie will work.
BLUEBERRIES: If you don’t particularly like its taste, you can replace it with any other type of fruit: for example, strawberries, blackberries, raspberries, peaches.
JAM: Choose the jam based on the chosen yogurt flavor to complement its taste: blueberry with blueberry yogurt, strawberry with strawberry yogurt, etc.
VANILLA It’s incredible how a pinch of this essence can enhance the flavor of your Porridge, but if you don’t like this spice, you can omit it.
OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.
STORAGE
The BLUEBERRY CHEESECAKE-flavored OVERNIGHT OATS Porridge can be prepared the night before for the following day; in fact, it will be even better. Once ready, it can be stored in the fridge in a sealed container for up to 2 days.
