- 28 oz potatoes
- 7 oz tuna in oil
- 4 eggs
- 7 oz mayonnaise
- 1 tbsp chopped parsley
- to taste salt

Steps
Boil the potatoes in a pot, still with the skin on, with plenty of salted water; it will take between 15 and 20 minutes depending on the size of the potatoes.
Check that they are cooked by piercing them with a fork, which should not encounter resistance (the potatoes should still be firm and not fall apart). Once cooked, drain the potatoes and let them cool completely. Then you just need to gently remove the skin by lightly pressing with your fingers: the potato skin will come off easily and quickly.
Prepare the HARD-BOILED EGGS: put the eggs in a small pot covered with cold water and bring the water to a boil, from this moment count 8/9 minutes.
Turn off the heat and transfer the pot to the sink and let cold tap water run over it to cool them down completely. Once completely cold, peel them gently and set aside.
Peel the cooled potatoes and cut them into chunks, add the drained and crumbled tuna with a fork, the mayonnaise, parsley, and adjust the salt. Mix, then add 1 hard-boiled egg cut into pieces and mix everything well. Plate by placing a layer of Tuned Potatoes, arrange the hard-boiled eggs cut into wedges, sprinkle with a handful of chopped parsley, and drizzle with a little extra virgin olive oil. Serve immediately or place in a container in the refrigerator covered with plastic wrap and consume within 24h.
NOTES
You can make the recipe lighter by replacing the mayonnaise with robiola, ricotta, or a spreadable cheese like Philadelphia.
To turn this preparation into a main dish, add smoked salmon, cheese cubes, or grilled chicken.
With this tonnato sauce, you can also dress grilled zucchini or eggplant or stuff tomatoes.
STORAGE
Once ready, Potato Salad with Tuna and Hard-Boiled Eggs should be consumed the same day; if there are leftovers, store them in the refrigerator in an airtight container for at most one day. Freezing is not recommended.
