The SAVORY CAPRESE is a no-bake savory pie perfect as an appetizer or at a buffet when you want something tasty and fresh to serve in the hot season and don’t feel like spending time at the stove.

For the base, you can use either crackers or taralli, breadsticks, pretzels, and even rusks, if they don’t contain sugar, just grind them in the mixer.

Once the base is prepared and left in the fridge or freezer to firm up, you’ll be ready to fill it with a layer of Genoese Basil Pesto, tomatoes, mozzarella, and basil leaves.

The final result will be a perfect Savory Caprese for the summer, no-bake, light yet tasty at the same time, colorful and scenic.

A cross between a savory pie and a salad, extremely easy and quick to prepare, which you can customize by adding herbs like basil or parsley to the base, changing the filling by adding other vegetables or canned tuna, switching the cheese to fresh goat cheese instead of mozzarella, or whatever your imagination suggests.

Ingredients

  • 6 oz crackers (or taralli)
  • 6 tbsp butter
  • 2 tbsp basil (chopped)
  • 3.5 oz mozzarella
  • 1 large beefsteak tomato
  • 5 oz Genoese pesto (+ for decoration)
  • A few leaves basil

  • Springform pan

Steps

  • Put the crackers in the mixer and grind them finely, transfer them to a bowl, add the melted butter, and mix with a spoon. If desired, add chopped parsley to the mixture.

    Pour the mixture into the springform pan and press it with the back of a spoon to form the base and edges. Once the base is ready, let it rest in the fridge for at least 30 minutes.

  • You can prepare Genoese Basil Pesto at home or buy it; in this case, I recommend choosing one of excellent quality.

    Take the base of the Savory Caprese from the fridge, remove it from the mold, spread a generous layer of Genoese Basil Pesto on the base. Cut the tomato and let excess liquid drain. Season with salt and a drizzle of oil.

    Arrange the seasoned tomato atop the Pesto layer, alternating with mozzarella slices not too thin. Decorate with a few drops of Genoese Basil Pesto and basil leaves.

NOTES

A tip for easier and more careful removal of the SAVORY CAPRESE base is to run the blade of a slightly moistened knife around the entire perimeter of the pan before removing it. 

For the base, you can use crackers, taralli, breadsticks, sugar-free rusks, salty croutons, as long as you reduce them to powder.
