SAVORY CREPES RECIPE WITH HAM AND CHEESE
A quick and easy dish to prepare, savory Crepes that practically everyone loves: a perfect wrap for various tasty and super appetizing fillings.
There are several versions, for example: Spinach and Stracchino Crepes, Crepes with Mushrooms, Crepes with Genoese Pesto and many others. Today we will prepare savory CREPES with Cooked Ham and Cheese, a classic always very successful, perfect for when we crave something quick yet tasty.
The recipe to prepare the base of the CREPES is very easy: just mix flour, eggs, and milk, they cook in a few minutes, and you can even make them in advance and fill them at the last moment. From the basic Crepes recipe, other variants have emerged, like GLUTEN-FREE CREPES and LACTOSE-FREE and egg-free Crepes.
Once your Crepes are ready, just fill them with thin slices of Cooked Ham (or Mortadella or Prosciutto), creamy cheese (I chose Stracchino or Crescenza), heat them a few seconds in the pan to melt the cheese until it’s stringy and in no time, you’ll have an alternative first course to pasta that’s delicious, easy to make, and really accessible to everyone.
Easy, quick, and very tasty, the Savory Crepes with Cheese and Ham will solve many lunches and dinners and will make a good impression even at a dinner with friends or for a special occasion.

Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 1 egg (large whole or 2 small)
- 1 pinch salt
- butter (to grease the pan)
- 5.3 oz cooked ham
- 5.3 oz cheese (Crescenza or Stracchino)

Steps
Place the whole egg in a bowl and beat it with an electric whisk for a few minutes. Add the sifted all-purpose flour and beat again with the whisk. Add the salt and room temperature milk, mixing quickly with a hand whisk to avoid lumps. Place a non-stick pan on the stove, and when it’s hot, grease it with a bit of butter. Pour a ladleful of crepe batter into the center and swirl the pan so it spreads evenly. Cook the crepes for about 2 minutes on each side. Once ready, stack them on a plate and set aside.
Now that you’ve finished preparing the Crepes, heat a non-stick pan and warm up a Crepe. Spread some Stracchino on half of the crepe, lay some ham on top, and fold it in half, then fold again to make a wedge. Heat it for a few seconds, then flip and heat the other side. Repeat with all the others. Serve hot right after they’re ready.
NOTES
CREPES: If you have allergies or intolerances, you can use the GLUTEN-FREE BASE CREPES RECIPE or the LACTOSE-FREE BASE CREPES RECIPE. In the latter case, to maintain lactose-free, use lactose-free cheese.
CHEESE: You can use Stracchino or Crescenza, or replace them with ricotta, spreadable cheese, or even Béchamel.

STORAGE
Once ready, the Crepes with Ham and Cheese can be stored in the refrigerator for up to 2 days. Savory crepes can also be prepared in advance and filled before serving. Just keep them covered in the refrigerator with food wrap so they remain soft and flexible.
