They can be prepared in just a few minutes, even in advance, to be baked at the last minute and are extremely versatile. Indeed, inside the crispy puff pastry shell, you can include countless ingredients, even those you already have available, to create many inviting bites that are always different.

Just have a roll of ready-made puff pastry, fill it to your liking, and with a few simple moves, you’ll bake in less than 30 minutes simple yet tasty savory croissants worthy of the best delis.

Today we will prepare together the SAVORY CROISSANTS Pizza Flavor, my favorite, perfect for when you crave pizza but don’t want to knead or spend too much time in the kitchen: crispy on the outside, soft on the inside with a filling of tomato and melted cheese: irresistible!

A recipe so easy even children can make it, and it might be a fun and tasty way to keep them busy for a few minutes!

Alternatively, you can also decide to bake them empty and then once baked and slightly cooled, cut them in half and fill them at the last minute with ingredients that wouldn’t give their best if cooked. An example? Smoked salmon and cream cheese, basil pesto, cherry tomatoes, and mozzarella, or simply thinly sliced mortadella and buffalo stracciatella… a delight!

Ingredients

  • 1 roll puff pastry
  • 4.4 oz mozzarella
  • 3.5 oz tomato sauce
  • to taste salt
  • 1 drizzle extra virgin olive oil
  • to taste oregano
  • butter (melted or egg yolk or milk)

Steps

  • Cut the mozzarella into pieces and leave it on a plate for a few minutes to release some of its liquid. In a bowl, pour the tomato sauce, a pinch of salt, and a drizzle of oil, and mix with a spoon. Roll out the puff pastry and cut it into 16 equal-sized wedges (or 8 larger ones). If you have the rectangular sheet, cut it into 2 parts and create small rectangles.

  • Distribute the tomato sauce evenly over the entire surface of the pastry, leveling it with a spoon and leaving 0.4 inches free from the outer circumference. Place a few pieces of mozzarella at the base of each triangle. Roll them up one by one from the base towards the tip to form the savory croissants.

  • Place the SAVORY CROISSANTS on a baking sheet lined with parchment paper making sure the tip is underneath so they don’t open during cooking. Brush the surface with an egg yolk or melted butter and sprinkle with dried oregano. Bake in a static oven at 410°F for 10 minutes, then lower the temperature to 356°F and bake for another 10-15 minutes. They should be slightly golden and nicely puffed. Remove from the oven and let them cool slightly before serving.

TIPS

To have flaky and well-layered savory croissants, it’s necessary that the puff pastry undergoes a thermal shock, so it would be better, once ready, to leave them in the fridge for at least 20 minutes before baking.

If you want to get ahead with the work, you can form the croissants the day before, place them on a baking sheet lined with parchment paper, cover them with plastic wrap, and store them in the fridge until ready to bake.

The ones in the recipe are filled with tomato sauce and mozzarella, but follow your tastes and modify the filling. For example, you could prepare SAVORY CROISSANTS with Cooked Ham and Scamorza, or brush the pastry with mustard and fill with sausages, for a vegetarian version try thinly sliced and lightly grilled zucchini and cheese.

STORAGE

As with all puff pastry preparations, I recommend consuming the savory croissants as soon as they are ready, otherwise they would lose their crispiness. Alternatively, you can freeze them either raw and bake as needed or cooked and pass them for a few minutes in the oven to make them crispy again.
