SOFT APPLE COOKIES WITHOUT BUTTER
Today we will prepare together the soft apple cookies without butter, easy-to-make treats, light and perfect for everyday snacks or breakfast.
If you know me, you know that I adore all kinds of apple desserts, from Grandma’s Apple Pie to Apple Puff Pastries, Apple Strudel with Shortcrust Pastry, I think I’ve tried almost every apple recipe I’ve come across.
What I might have been missing was the Apple Cookie recipe, but not dry cookies, the classic soft and slightly moist dunking cookies that melt in your mouth.
An incredibly easy recipe accessible to everyone, made with simple ingredients that we probably already have at home, and it has the huge advantage of being very quick: you won’t need a rolling pin or cookie cutters.
To make the Soft Apple Cookies at home, you will need to cut an apple into pieces and ‘season’ it with sugar, cinnamon, and a dash of lemon juice. Then, in a bowl, whip the eggs with the sugar, add the liquid ingredients (oil and milk), and then the dry ones (flour, baking powder), and once you have a smooth and homogeneous mixture, add the apple pieces.
Drop spoonfuls of the mixture onto a square baking pan lined with parchment paper and bake for about 30 minutes in the oven. You’ll bake a dunking cookie that needs only to be cut into squares, and if you want, sprinkle with powdered sugar: you’ll see how in their simplicity these Soft Apple Cookies without butter are delicious and genuine, and they will let you enjoy the apple flavor at its best, but be careful because one leads to another!

WHAT YOU NEED TO MAKE SOFT APPLE COOKIES
- 1 3/4 cups all-purpose flour
- 2 eggs (MEDIUM)
- 3/4 cups sugar
- 3 1/2 tbsp milk
- 3 1/2 tbsp vegetable oil
- 1/2 packet baking powder
- 1 apple
- as needed ground cinnamon
- 1 tbsp granulated sugar
- 1 tsp lemon juice
- sugar granules

HOW TO MAKE HOMEMADE APPLE COOKIES
Now with an electric mixer, beat the whole medium eggs with the sugar until they become foamy and light. Then add the vegetable oil and mix with the beaters, finally pour in the water and mix again for a few moments (if you prefer, you can replace the water with milk).
Now incorporate the all-purpose flour and the previously sifted baking powder, and continue mixing until the ingredients are well combined.
Peel the apple, cut it into small cubes, then place it in a bowl with 1 tablespoon of lemon juice, 1 tablespoon of sugar, and some ground cinnamon (I use ½ teaspoon). Mix well to cover all the apple pieces.
Add the cubed apple with its seasoning to the mixture and fold it in with a spatula until completely incorporated.
Pour the mixture into a square baking pan (8.7×8.7 inches) lined with parchment paper, level it slightly with a spatula, and sprinkle with sugar granules. Bake in a static oven at 338°F for about 30 minutes. To check if they are done, perform the toothpick test as if it were a cake. Once ready, take them out of the oven and let them cool before cutting them into cubes or rectangles. Enjoy your breakfast!
STORAGE
Once ready, store our soft and quick apple cookies in a tin box or an airtight container so they remain fresh and good as if just baked. Keep them at room temperature in a cool, dry place, and they will stay great for at least 2-3 days.
NOTES AND TIPS
ALL-PURPOSE FLOUR: For a more rustic version of the soft apple cookies, you can mix all-purpose flour and whole wheat flour in equal parts.
APPLE: We can make this recipe with any variety of apple we want, choosing ripe and sweet fruits, and they will all be perfect.
VEGETABLE OIL: This recipe is designed to be made with vegetable oil (preferably sunflower oil because it’s milder), but nothing prevents you from using butter in the same quantity. You’ll just need to melt it in a double boiler or microwave before adding it to the dough.
SUGAR GRANULES: You can skip sprinkling sugar granules before baking the Apple Cookie. Once baked, if you like, dust it with powdered sugar.
VARIATIONS OF THE SOFT APPLE COOKIE RECIPE
This recipe for butter-free soft apple cookies can obviously be customized by adding ingredients. For a more rustic taste, you can incorporate crushed walnuts into the dough, or for a more indulgent version, add chocolate chips or chunks.
