WHAT YOU NEED TO MAKE THE STRAWBERRY CAKE

  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups strawberries
  • 2 eggs
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 packet baking powder
  • 1 tbsp water
  • 2 tbsps strawberry jam

  • Wash the strawberries, remove the hull, put them in a large-blade mixer, blend at high speed until you get a smooth puree.

  • Add the blended strawberries, sugar, eggs, oil, sifted flour, and blend for a few seconds. Finally, add the baking powder and blend again.

  • Pour the mixture into a greased and floured mold, then bake in a preheated static oven at 350°F for about 45 – 50 minutes. Always do the toothpick test to check doneness when 5 minutes are left. Remove from the oven and let cool in the pan before transferring to a wire rack.

  • You can serve the strawberry cake simply by dusting it with powdered sugar, but I recommend moistening it with glaze to make it even softer and more fragrant. To do this, just dilute 2 tablespoons of strawberry jam (find the recipe HERE) with a little water or alternatively prepare a syrup based on blended strawberries with powdered sugar. Then filter and put on the fire for a couple of minutes.

  • 1 Preheat the Oven to 350°F.
    2 Wash the strawberries, cut them into pieces.
    3 Insert all the ingredients except the baking powder into the closed lid and blend for 20/30 seconds at speed 7/8.
    4 Add the baking powder and blend again for 6/8 seconds at speed 6.
    5 Pour the mixture into a greased and floured 9-10 inch diameter cake pan.
    6 Bake for 45 – 50 min. (baking depends on the type of oven, do the toothpick test)

STORAGE

The Strawberry Cake keeps at room temperature under a glass dome for a maximum of 3 days.

NOTES AND TIPS

STRAWBERRIES Use fresh and seasonal strawberries. The choice of strawberries is fundamental for the success of the strawberry pan. Choose ripe and fragrant strawberries, with a deep, even red color. Avoid bruised or overly soft strawberries. You can use the type of strawberries you prefer: small, large, medium, just wash them well, you can insert them without cutting them into the large blade blender bowl.

MOLD I chose a BUNDT CAKE mold, but a long loaf pan or the classic round sponge cake pan (9 inches in diameter) will do just fine.

GLAZING: Once out of the oven, brush the STRAWBERRY CAKE with a glaze of diluted strawberry jam with a little water or prepare a strawberry syrup by cooking fresh fruit for a few minutes with a little water and powdered sugar (filter it through a sieve before placing it on the cake). But you can also simply dust this strawberry cake with powdered sugar.
