WALNUTS and APPLES CAKE
A traditional, soft and slightly moist cake with APPLES and WALNUTS, without butter, ready in minutes. A classic pantry dessert perfect for breakfast or a healthy snack.
I love practically any dessert with APPLES, and among them, one of my favorite recipes is definitely this WALNUTS and APPLES CAKE, a simple preparation that reminds me of my childhood when I visited my grandmother, and she always had a wonderful freshly baked cake ready for snack time.
This quick and practical Apples and Walnuts Cake recipe is prepared in 15 minutes: once you peel the Apples, just grate them and insert them raw into a simple batter directly in a bowl, mix, and in a few seconds, you’ll bake one of the best Walnuts and Apples Cakes you’ve ever tasted.
A dessert with a soft, velvety, and slightly moist texture, thanks to the raw grated apples, without butter, perfect in its simplicity.
But if you prefer, you can enrich it, for example, by adding cinnamon powder or vanilla extract, or grated orange zest into the batter.

Ingredients
- 2 cups Golden apples
- 1 cup walnuts (walnut flour)
- 2 cups all-purpose flour
- 1/2 cup peanut oil
- 1/2 cup plain yogurt
- 3/4 cup granulated sugar (or brown sugar)
- 3 eggs (whole)
- lemon zest (optional)
- 1 packet baking powder

Steps
First, peel the apples, cut them into 4 and remove the core. Then grate them using the large holes of the grater. You can also speed up by putting them in the mixer but do not turn them into mush. Set them aside. In a bowl, pour the whole eggs together with the sugar and beat with electric whisks until you obtain a white and frothy mixture. Add yogurt and peanut oil and mix again for a few seconds.
Add the Walnut flour to the mixture, mix with a spatula, then also add the sifted all-purpose flour together with the baking powder and incorporate well with a spatula until you get a homogeneous and lump-free mixture. Finally, add the previously grated Apples and mix everything. If you want to flavor it, this is the moment to add Cinnamon or Vanilla.
Pour the batter into a previously buttered and floured cake pan, garnish with some Walnut kernels, and bake in a preheated oven at 340°F for about 50 minutes. Before removing it from the oven, do the toothpick test. Once ready, remove it from the oven but wait until it is completely cooled before removing it from the mold. You can sprinkle it with powdered sugar.
NOTES
APPLES: Any type of APPLES is fine for this recipe, the important thing is that they are not too mushy. I used GOLDEN APPLES for their aromatically sweet taste, with a delicate acidity. It is important that the grated apples have a coarse texture and are not turned into puree, otherwise, they would not distribute well in the batter and would weigh it down.
WALNUT FLOUR: You can use whole Walnuts instead of Walnut flour, but you will have to blend them into a very fine powder. Alternatively, for a less rustic taste, replace with an equal amount of Almond Flour.
SUGAR: Granulated sugar can be replaced with brown sugar.
PEANUT OIL If you prefer, you can replace the peanut oil with melted butter in the same quantities.
LEMON ZEST: For additional flavoring, you can add grated lemon or orange zest.
DECORATION: You can choose to bake the Walnuts and Apples Cake simply and once cooled, sprinkle with powdered sugar or decorate the surface before baking with Walnut kernels.
VARIANTS: You can use the same recipe to prepare a Carrot and Almond Cake, simply replace the Apples with an equal amount of Carrots and the Walnut Flour with Almond Flour. Another variant is the Sweet Pumpkin and Almond Cake.
STORAGE
This Apples and Walnuts Dessert stays soft for up to 3 days, covered with plastic wrap, in a cool and dry place.
