As we have learned, breakfast is the most important meal of the day because it gives us the right charge and the necessary energy to face the various tasks.
Today I present you this recipe for an Oat Flakes, Milk, and Greek Yogurt Breakfast, a sort of Porridge that is prepared in no time, rich in energy and taste, the OVERNIGHT OATS PORRIDGE with Kiwi and Granola.
A nice cup of this dessert of Anglo-Saxon origins and we will be ready to face the challenges of the day whether in the office, at school, at home for housework or, for those who can, for sightseeing towns and villages.
For those who don’t know, the Overnight Porridge is a variant of the classic Anglo-Saxon recipe that requires no cooking, perfect for those who have little time or don’t want to cook. It is prepared in advance, usually the night before, left in the fridge for a night, and is ready to be enjoyed with the topping of your choice upon waking.
An extremely easy recipe: the oat flakes are mixed together with milk or water, Greek yogurt, flavored to taste with vanilla, and sweetened with honey. Once mixed, the mixture does not need to be cooked, it will simply be placed in the fridge to rest for at least 4 hours, preferably overnight.
You can also watch the video within the recipe to follow each step, although I assure you it is really easy and I am sure you won’t need it.
Once ready, you will only have to choose whether to layer it or not with your favorite yogurt, spreadable creams, and garnish it with the Topping you prefer because there are endless all delicious possibilities.
In today’s recipe, I created a first layer with the Porridge, a second made of 0% fat Greek vanilla yogurt to which I added pieces of fresh Kiwi and finished simply by adding more diced Kiwi, Granola, and a few drops of Honey because often the simplest things are the most delicious.
You will see how this no-cook Porridge cup will fill you up, without weighing you down too much, for a long time and you will get to lunch without that annoying feeling of hunger.

  • 1/3 cup water (or plant-based milk or cow milk)
  • 1 tsp honey (or maple syrup)
  • 4.2 oz 0% fat Greek yogurt
  • 2.8 oz 0% fat Greek yogurt

Steps

  • In a bowl, mix oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based drink) until combined. Transfer the mixture into a single-serving cup and place in the fridge for at least 4 hours, preferably overnight.  

  • After resting and before consuming, finalize the preparation. Clean the Kiwi by removing the outer skin, slice it. Chop some slices into cubes and keep some whole for the final decoration. Put the yogurt and kiwi cubes in a bowl and mix to combine. Pour everything on the oat layer and level with the back of a spoon.

  • You can already consume your no-cook Porridge like this by adding just a few more pieces of Kiwi on top but if you want to make it even more delicious add some Granola and a few drops of Honey. Enjoy your breakfast!

NOTES

WATER For an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based beverage (soy, almond, oat, rice).

HONEY You can replace the honey with maple syrup or sweetener, for a light version.

VANILLA It is incredible how a pinch of this essence can enhance the flavor of your Porridge but if you don’t like this spice you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.

KIWI: If you don’t particularly like its taste, you can replace it with any other type of fruit such as strawberries, raspberries, lemon, peach.

STORAGE

The OVERNIGHT OATS PORRIDGE with Kiwi and Granola can be prepared the night before for the next day, indeed it will be even better. Once ready, it can be kept in a closed container in the fridge for up to 2 days.

  • How can I achieve the right consistency of Oat Flakes?

    To achieve the perfect consistency of oats, it’s all about the oats/liquid ratio. Generally, a 1:2 ratio works well. If the oats are too thick, add a bit more liquid, vice versa if they are too liquid, slightly reduce the amount of milk/water next time.
