We’ve learned it by now, breakfast is the most important meal of the day because it gives us the right energy and strength to tackle various tasks.
Today I present this recipe for a Breakfast with Oat Flakes, Milk, and Greek Yogurt, a sort of Porridge that is prepared in no time, rich in energy and taste, the OVERNIGHT OATS with COFFEE.
A nice cup of this dessert with Anglo-Saxon origins and we will be ready to face the challenges of the day whether at the office, at school, at home for household chores, or, for those who can, to go as tourists around towns and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that requires no cooking, perfect for those who have little time or don’t feel like cooking. It is prepared in advance, usually the night before, left in the fridge overnight, and is ready to be enjoyed with your preferred topping in the morning.
A very easy recipe: the oat flakes are mixed with milk or water, Greek yogurt, flavored as desired with vanilla, and sweetened with honey. Once mixed, the mixture doesn’t need cooking, just place it in the fridge to rest for at least 4 hours, better overnight.

Once ready, you just have to choose whether to layer it or not with your favorite flavor of yogurt, spreadable creams, and garnish it with the topping you prefer because there are endless possibilities, all delicious.
In today’s recipe of OVERNIGHT OATS with COFFEE, I created a first layer with the Porridge, a second with 0% Greek yogurt mixed with a cup of espresso coffee, and finished it off by dusting it with some unsweetened cocoa, because often the simplest things are the best.
You’ll see how this simple breakfast will fill you up, without weighing you down too much, for a long time and you’ll reach lunchtime without that annoying hunger sensation.

Ingredients

  • 1/2 cup oat flakes
  • 1/2 cup water
  • 1 teaspoon honey (or maple syrup)
  • 1/2 cup 0% fat Greek yogurt
  • 1/4 cup 0% fat Greek yogurt (or coffee yogurt)
  • 1 cup coffee
  • to taste unsweetened cocoa powder

Steps

  • In a bowl, mix together oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based drink) until combined. Transfer the mixture to a single serving cup and place in the fridge for at least 4 hours, better overnight.

  • After resting, and before consuming, finish the preparation. Make some espresso coffee (even leftover from the morning moka is fine), add a cup to the yogurt, sweeten to taste (I didn’t add anything), then mix until blended. Pour it over the oat layer and level with the back of a spoon.

  • You can consume your no-cook coffee porridge like this, or dust it with unsweetened cocoa powder, or if you want to make it super indulgent, melt 1 oz of milk chocolate in the microwave with 1 teaspoon of coconut oil and distribute it evenly over the yogurt and coffee layer and leave in the fridge to set for a couple of minutes: it will remind you of the taste of the famous Pocket Coffee chocolates.  

NOTES

WATER To have an even creamier porridge, you can replace water with an equal amount of cow’s milk or plant-based drink (soy, almond, oat, rice).

HONEY You can replace honey with maple syrup or sweetener for a light version.

COFFEE: You can use coffee prepared with either a moka pot or coffee machines. Even decaf works well, and alternatively, if you want to serve it to the whole family and there are children, replace it with soluble barley.

VANILLA It’s incredible how a pinch of this essence can improve the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.

STORAGE

The OVERNIGHT OATS with COFFEE can be prepared the night before for the next day; in fact, they will taste even better. Once ready, they can be stored in the fridge in a closed container for up to 2 days.

  • How can I get the right consistency of Oat Flakes?

    Achieving the perfect consistency of oats is all about the oats-to-liquid ratio. Generally, a 1:2 ratio works well. If the oats are too thick, add a bit more liquid, or if they’re too liquid, slightly reduce the amount of milk/water next time.

  • How can I balance sweetness when adding fruit and toppings to Oat Flakes?

    Overnight Oats with some combinations (such as with hazelnut or pistachio cream) may be too sweet. Keep this in mind when layering it, and taste a spoonful before adding extra sweeteners like honey or maple syrup.
