PISTACHIO OVERNIGHT OATS
We’ve learned by now, breakfast is the most important meal of the day because it gives us the right energy and strength to better face various tasks.
Today I present this recipe for a Breakfast of Oat Flakes, Milk, and Greek Yogurt, a kind of Porridge that is prepared in very little time, rich in energy and taste.
A nice bowl of this Anglo-Saxon origin dessert and we’ll be ready to face the day’s challenges whether at the office, school, home for housework, or, for those who can afford it, sightseeing in villages and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that requires no cooking, perfect for those who have little time or don’t feel like cooking. It is prepared in advance, usually the night before, left in the refrigerator overnight, and in the morning it is ready to be enjoyed with your favorite topping.
An extremely easy recipe: the oat flakes are mixed with milk or water, Greek yogurt, flavored to taste with vanilla, and sweetened with honey. Once mixed, the mixture does not need to be cooked, it will simply be placed in the fridge to rest for at least 4 hours, better if overnight.

Once ready, you’ll only have to choose whether to layer it or not with your favorite flavored yogurt, spreads, and garnish it with your preferred Topping because there are endless delicious possibilities.
In today’s recipe, I created the first layer with the Porridge and simply garnished it with Pistachio Cream which, with its sweetness, perfectly balances the creaminess and slight acidity of the base. However, you can choose to create a second layer with Pistachio Yogurt and finish with the spread or not.
You’ll see how this simple breakfast will satisfy you, without weighing you down too much, for a long time and you’ll reach lunch without that annoying feeling of hunger.

Steps
In a bowl, mix together oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based beverages) until combined. Transfer the mixture to a single-serving cup and refrigerate for at least 4 hours, preferably overnight.
After resting and before consuming, finish the preparation. Melt the pistachio cream in the microwave for a few seconds, spread a layer on the Porridge. Put it in the fridge for 2 minutes to solidify, then decorate as desired with pistachio granules or other nuts.
NOTES
WATER For an even creamier porridge, you can replace the water with an equal amount of cow’s milk or plant-based beverage (soy, almond, oat, rice).
HONEY You can replace honey with maple syrup or sweetener for a light version.
PISTACHIO CREAM: If you do not particularly like its taste, you can replace it with any other type of spreadable hazelnut cream or fruit jam.
VANILLA It’s incredible how a pinch of this essence can improve the taste of your Porridge, but if you do not like this spice, you can omit it.
NIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.
STORAGE
The PISTACHIO OVERNIGHT OATS can be prepared the night before for the following day, it will actually taste even better. Once ready, it can be stored in the fridge in a closed container for up to 2 days.
