We’ve learned by now, breakfast is the most important meal of the day because it gives us the right boost and the necessary strength to face various tasks.
Today I present to you this recipe for an Oat Flakes, Milk, and Greek Yogurt Breakfast, a kind of Porridge that is quick to prepare, rich in energy and flavor.
A nice cup of this Anglo-Saxon dessert and we will be ready to tackle the day’s challenges whether at the office, at school, at home for household chores or, for those who can, to be tourists in villages and cities.
For those who don’t know, the Overnight Porridge is a variant of the classic Anglo-Saxon recipe that doesn’t require cooking, perfect for those with little time or who don’t want to cook. It’s prepared in advance, usually the night before, and left in the refrigerator overnight, ready to be enjoyed with your preferred topping in the morning.
An incredibly easy recipe: oat flakes are mixed with milk or water, Greek yogurt, flavored to taste with vanilla, and sweetened with honey. Once mixed, there’s no need to cook it, just place it in the fridge to rest for at least 4 hours, preferably overnight.

Once ready, you only need to choose whether or not to layer it with your favorite flavor of yogurt, spreads, and garnish with the Topping you prefer as there are endless, delicious possibilities.
In today’s recipe, I created a first layer with the Porridge, a second with 0% Greek yogurt and fresh raspberries, and finished with a milk chocolate topping.
You’ll see how this simple breakfast will fill you up, without being too heavy, for a long time and you’ll reach lunch without that annoying feeling of hunger.

Ingredients

  • 1/2 cup oat flakes
  • 3.4 oz almond milk (or other plant-based milk or water)
  • 1 teaspoon honey (or maple syrup or sweetener)
  • 4.4 oz Greek yogurt
  • 1.1 oz raspberries
  • 2.5 oz 0% fat Greek yogurt
  • 1.1 oz milk chocolate
  • 1/2 teaspoon coconut oil (or sunflower seed oil)

Steps

  • In a bowl, mix oat flakes, honey, yogurt, and almond milk (or cow’s milk or other plant-based beverage) until combined. Transfer the mixture into a single-serving cup and refrigerate for at least 4 hours, preferably overnight.  

  • After resting and before consuming, finalize the preparation. Mash the raspberries with a fork and add them to the yogurt, mixing until well combined. Pour it over the oatmeal layer and level with the back of a spoon.

  • Melt the chocolate together with coconut oil in the microwave and distribute it evenly over the yogurt and raspberry layer. Place in the fridge to solidify for a few minutes. Decorate with fresh raspberries and a mint leaf as desired.

NOTES

WATER For an even creamier porridge, you can replace water with an equal amount of cow’s milk or plant-based beverage (soy, almond, oat, rice).

HONEY You can replace honey with maple syrup or sweetener for a light version.

RASPBERRIES: If you don’t particularly like its taste, you can replace it with any other type of berry: blueberries, blackberries, strawberries, or other fruits.

VANILLA It’s incredible how a pinch of this essence can enhance the taste of your Porridge, but if you don’t like this spice, you can omit it.

OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.

STORAGE

The Raspberry and Chocolate OVERNIGHT OATS can be prepared the night before for the next day; indeed, it will be even better. Once ready, it can be stored in the fridge in a sealed container for up to 2 days.

  • How can I achieve the right consistency of Oat Flakes?

    To achieve the perfect consistency for oats, it’s all about the oats-to-liquid ratio. Generally, a 1:2 ratio works well. If the oats are too thick, add a bit more liquid, and if they are too runny, slightly reduce the amount of milk/water next time.
