Today I present this recipe for a breakfast based on Oat Flakes, Milk, and Greek Yogurt, a kind of Porridge prepared in no time at all, rich in energy and flavor: the OVERNIGHT OATS PORRIDGE WITH SALTED CARAMEL.
A nice cup of this Anglo-Saxon dessert and we will be ready to face the day’s challenges whether at the office, at school, at home for housework, or for those who can afford it, to be tourists in towns and cities.
For those who don’t know, Overnight Porridge is a variant of the classic Anglo-Saxon recipe that does not require cooking, perfect for those who have little time or don’t want to cook. It is prepared in advance, usually the night before, left in the refrigerator overnight, and ready to be enjoyed with the topping of your choice upon waking.
An extremely easy recipe: oat flakes are mixed together with milk or water, Greek yogurt, flavored as desired with vanilla, and sweetened with honey. Once the mixture is stirred, there is no need to cook it, it just needs to be placed in the fridge to rest for at least 4 hours, preferably overnight.

Once ready, you only need to choose whether to layer it with your favorite yogurt, spreads, and garnish it with your preferred Topping because there are endless delicious possibilities.

- 4.6 tbsp butter

- 1/4 cup 0% fat Greek yogurt (or caramel yogurt)

Steps
Below I explain how to make Salted Caramel at home, but if you don’t have time or desire, you can easily buy it ready-made and move directly to the Porridge preparation.
Pour the sugar into a not too large saucepan with a thick bottom and cook over medium-low heat until the sugar starts to melt. Rotate the saucepan often to prevent the sugar from burning the edges. Meanwhile, heat the cream. As soon as the sugar is completely melted and has an amber color, lower the heat and add the butter and salt.
Quickly stir with a whisk until the butter is completely melted, then also pour in the hot cream. Mix with a whisk until a smooth consistency is obtained, then transfer it to a jar and let it cool first at room temperature and then in the fridge.In a bowl, mix together oats, honey, yogurt, and almond milk (or cow milk or other plant-based beverage) until combined. Transfer the mixture into a single-serving cup and place it in the fridge for at least 4 hours, preferably overnight.
After resting and before consuming, finish the preparation. In a bowl, combine 70g of Greek Yogurt with 30g of Salted Caramel prepared previously, then stir with a spoon until perfectly combined. Pour everything over the layer of oats and level with the back of a spoon.
You can consume your no-cook Porridge as is, but if you want to make it super tasty, pour 2 tablespoons of Salted Caramel over the yogurt layer and distribute it evenly. Put it in the fridge to solidify for a few minutes. Decorate as desired with toasted peanuts.
NOTES
WATER For an even creamier porridge, you can replace the water with an equal amount of cow milk or plant-based beverage (soy, almond, oat, rice).
HONEY You can replace honey with maple syrup or sweetener for a light version.
SALTED CARAMEL: If you don’t have time or desire to make it, you can purchase Caramel-flavored Yogurt at the supermarket or replace it with a caramel protein dessert/cream. Similarly, if you can’t find pre-made Salted Caramel Topping, you can omit it or replace it with spreads.
VANILLA It’s amazing how a pinch of this essence can enhance your Porridge’s taste, but if you don’t like this spice, you can omit it.
OVERNIGHT REST: Let the oats rest in the fridge for at least 2-3 hours, preferably overnight. This allows the flavors to blend and the oats to soften to the perfect consistency.
STORAGE
The OVERNIGHT OATS PORRIDGE WITH SALTED CARAMEL can be prepared the night before for the next day, and it will be even tastier. Once ready, it can be stored in the fridge in a container for up to 2 days.
