Today I present this recipe for a Breakfast of Rolled Oats, Milk and Greek Yogurt — a type of porridge that is prepared in very little time, full of energy and flavor: COFFEE PORRIDGE OVERNIGHT OATS.
For those who don’t know, Overnight Porridge is a variation of the classic Anglo-Saxon recipe that doesn’t require cooking, perfect for those who have little time or don’t feel like cooking.
It is prepared in advance, usually the night before, left in the refrigerator for a night and in the morning it is ready to be enjoyed with the topping you prefer.
A very easy recipe: the rolled oats are mixed together with water or milk, the Greek yogurt, flavored as you like with vanilla and sweetened with honey. Once mixed, the mixture does not need to be cooked; it simply goes into the fridge to rest for at least 4 hours, better if overnight.
Once it’s ready you only have to decide whether to layer it or not with your favorite yogurt, spreads, and top it with the toppings you like because the possibilities are endless and all delicious.
In today’s recipe for OVERNIGHT OATS with COFFEE, I created a first layer with the porridge, a second made of 0% Greek yogurt mixed with an espresso cup of coffee and finished it by dusting everything with unsweetened cocoa powder, because often simple things are the best.
You’ll see how this simple breakfast will keep you full without weighing you down, for a long time and you’ll reach lunch without that annoying sense of hunger.

Ingredients YOGURT AND ROLLED OATS WITH COFFEE
- 1/2 cup rolled oats
- 3.4 fl oz water
- 1 tsp honey (or maple syrup)
- 1/2 cup Greek yogurt, 0% fat
- 1/3 cup Greek yogurt, 0% fat (or coffee-flavored yogurt)
- 1 espresso cup coffee
- to taste unsweetened cocoa powder

Steps
In a bowl, mix the rolled oats, honey, yogurt and almond milk (or cow’s milk or another plant-based milk) until combined. Transfer the mixture into a single-portion dessert cup and place in the fridge for at least 4 hours, preferably overnight.
After resting and before serving, finish the preparation. Prepare an espresso (leftover moka coffee is fine too) and add one espresso cup to the yogurt, sweeten to taste (I didn’t add anything), then mix until incorporated. Pour everything over the oat layer and smooth with the back of a spoon.
You can enjoy your no-cook coffee porridge as is, or dust it with unsweetened cocoa. If you want to make it extra indulgent, melt 1 oz (about 30 g) milk chocolate in the microwave with 1 tsp (5 ml) of coconut oil and drizzle it evenly over the yogurt and coffee layer, then put it in the fridge to set for a couple of minutes: it will remind you of the famous Pocket Coffee chocolates.
NOTES
WATER To obtain an even creamier porridge you can replace the water with an equivalent amount of cow’s milk or plant-based milk (soy, almond, oat, rice).
HONEY You can replace the honey with maple syrup or a sweetener for a lighter version.
COFFEE: You can use coffee prepared with a moka pot or with coffee machines. Decaffeinated coffee works fine, and if you are serving the whole family and there are children, you can replace it with soluble barley coffee.
VANILLA It’s amazing how a pinch of this extract can improve the taste of your porridge, but if you don’t like this flavor you can omit it.
OVERNIGHT REST: Let the oats rest in the refrigerator for at least 2-3 hours, preferably overnight. This allows the flavors to meld and the oats to soften to the perfect consistency.
STORAGE
The COFFEE OVERNIGHT OATS porridge can be prepared the evening before for the next day; in fact it will be even better. Once ready, keep it refrigerated in a closed container for up to 2 days.

How can I get the right consistency for the rolled oats?
To get the perfect oat consistency it’s all about the oats-to-liquid ratio. In general, a 1:2 ratio works well. If the oats are too thick, add a little more liquid; if they’re too runny, slightly reduce the amount of milk/water next time.
How can I balance sweetness when adding fruit and toppings to the rolled oats?
Overnight oats can become too sweet with some pairings (for example with hazelnut or pistachio cream). Keep that in mind when layering and taste a spoonful before adding extra sweeteners like honey or maple syrup.
Can I heat my Overnight Oats porridge or should it be eaten cold?
