Ingredients

Purchase of yellow chicken.
Choose medium-small chicken thighs and ask the butcher to separate them into thighs and drumsticks and remove the skin: chicken skin is very fatty so it’s best to remove it before cooking.

  • 2 chicken thighs (yellow, skinless, separated into thighs and drumsticks)
  • to taste lemon juice (or white wine)
  • to taste herb and spice roast mix

Preparation

  • 1. Store raw chicken in a sealed container in the coldest part of the fridge at a temperature of 41°F max and avoid its liquids dripping on other foods.

    2. Do not wash raw chicken: you could spread germs through water splashes.

    3. After touching the chicken, thoroughly wash utensils, surfaces, and hands with hot water and soap to avoid cross-contamination.

    4. Cook the chicken well.

    Cut into the thickest part: the meat should not show any traces of pink and the juices should be completely clear.

  • Drizzle thighs and drumsticks with lemon juice – or alternatively with white wine.
    Season with a mix of herbs and spices for roasting.

  • Follow the instructions – program, temperature, and times – indicated in your appliance’s user manual.
    Check the degree of cooking from time to time.

    – Preheat for 5 minutes;
    – Take out the cooking basket and place thighs and drumsticks on the grill accessory, avoiding overlap;
    – Cook for 25 minutes;
    – Take out the cooking basket and check that the chicken is cooked internally;
    – Turn the chicken pieces;
    continue cooking for 5 minutes to ensure they are evenly crispy and golden.

    Plate up.
    Season with lemon juice.

  • Line a baking sheet with a sheet of parchment paper.
    Place thighs and drumsticks on it.

    Preheat the oven.

    Medium-small chicken thighs
    Bake in a fan oven at 356°F for 40 minutes and continue at 320°F for 20 minutes.

    Larger chicken thighs
    Bake in a fan oven at 392°F for 40 minutes and continue at 356°F for 20 minutes.
