Baked Cod with Black Olives

Ingredients

  • cod (to be soaked)
  • 1 pinch garlic powder
  • 1 shot white wine
  • 12 black olives in brine
  • 1 vegetable stock cube (homemade)
  • 2 tbsp water
  • 1 pinch mixed peppercorns (with grinder)
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • • cut the cod into pieces;
    • rinse the pieces;
    • soak them in cold water for 48 hours;
    • change the water at least 3 times or better every 8 hours;
    • remove the skin;
    • remove most of the bones.

  • Heat a sprinkle of garlic powder in a pan.
    Deglaze with a shot of white wine.
    Sear the cod pieces for a couple of minutes on each side, being careful not to let them stick to the bottom of the pan.

  • Drain and rinse the black olives.

    Move the seared cod pieces to an oven-safe baking dish.
    Distribute the black olives.
    Dissolve a vegetable stock cube in 2 tablespoons of water to obtain a vegetable broth and pour over the cod pieces.
    Grind the pepper and add the chopped parsley.

  • Briefly preheat the oven.
    Bake at 350°F in a fan oven for 10-15 minutes, depending on the size of the pieces.

    Plate.
    Drizzle with its cooking juices and a drizzle of extra virgin olive oil.
