To gratinate my sea bass fillets, I used a homemade breadcrumb: simple, light, and healthy, made with whole wheat breadcrumbs flavored with lemon juice or orange juice.
Remember to account for the breading in the total carbohydrate count of your meal.

- farmed sea bass, fillets
- to taste whole wheat breadcrumbs

- 1 pinch mixed peppercorns (with a grinder)

Preparation
I recommend buying the fish from your trusted fishmonger, asking for it already eviscerated, filleted, and scaled.
Rinse the sea bass fillets under running water, leave them to drain in a colander, and pat dry any remaining water with kitchen paper towels.
They should be very dry.Take the sea bass fillets out of the fridge at least half an hour before cooking.
Pat them dry again.
In a bowl, pour:
• whole wheat breadcrumbs;
• salt;
• pepper;
• oregano or other aromatic herb;
and mix.Drizzle the breading with lemon juice or orange juice and mix to obtain flavored crumbs.
Line a baking tray with a sheet of parchment paper and place the sea bass fillets on top without overlapping them.
Distribute the flavored breadcrumb over the sea bass fillets.Briefly preheat the oven.
Bake at 356°F (180°C) in a fan-assisted oven for 10-15 minutes, depending on the size of the fillets, until the meat turns white and the breading reaches the desired level of browning.Plate up.
Grind a bit more pepper, add some parsley, and drizzle with a little olive oil.
Serve with lemon or orange slices.Your baked gratinated sea bass fillets are ready.
