Baked Grouper with Cherry Tomatoes

The baked grouper with cherry tomatoes is a light fish main dish that requires easy and quick cooking.
With olives and capers, all typical ingredients of the Mediterranean table.

Grouper is a fish with digestible and premium meat.
Grouper contains cholesterol [47 mg of cholesterol per 100 g of grouper].
For an adequate dietary intake of cholesterol, a daily consumption of less than 300 mg is recommended.

Can be replicated with other fish steaks, from swordfish to salmon to tuna.

Ingredients

  • 2 steaks grouper
  • to taste lemon juice (or white wine)
  • 1 pinch salt
  • 1 pinch green peppercorns (with grinder)
  • to taste parsley (leaves and stems)
  • to taste celery (stalks)
  • 12 cherry tomatoes
  • 12 baked black olives (pitted)
  • to taste salted capers
  • 1 drizzle extra virgin olive oil (raw)

Suggested Tools

  • Paper towel kitchen
  • 1 Knife
  • 1 Cutting board
  • 1 Baking tray
  • 1 Parchment paper sheet

Preparation

  • Wash the grouper steaks thoroughly under running water, let them drain in a colander and pat the remaining water well with kitchen paper towels.
    They must be very dry.

  • Whether fresh or defrosted, take the grouper steaks out of the fridge at least half an hour before cooking them.

    Line a baking tray with a sheet of parchment paper and place the grouper steaks on top.

    Grouper steak
  • Drizzle with lemon juice [or white wine].
    Season with a pinch of salt and a pinch of green pepper.
    Add the parsley.

  • Celery
    Thoroughly wash the celery.
    Cut the celery stalks into chunks.

    Cherry Tomatoes
    Thoroughly wash the tomatoes.
    Cut and remove the stem area if you deem it necessary.
    Cut each berry vertically into halves or quarters.

    Olives
    Drain and rinse the olives.

    Capers
    Rinse and squeeze a handful of capers and finely chop them with a knife.

    Distribute celery, cherry tomatoes, olives, and capers over the grouper steaks and around them.

  • Briefly preheat the oven.
    Bake at 355° F in a fan oven for 20 minutes.

    Plate.
    Drizzle with a raw olive oil drizzle.
