Baked Grouper with Pistachio Crumble

Grouper is a fish with digestible and high-quality meat.

Baked Grouper with Pistachio Crumble

Ingredients

  • 2 steaks grouper
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • pistachios (crushed)
  • parsley
  • 1 drizzle extra virgin olive oil (raw)

Tools

  • 1 Baking pan 10×11 inches
  • 1 Parchment paper sheet

Preparation

  • Rinse the grouper steaks under running water, let them drain in a colander and pat the residual water with kitchen paper towels.
    They must be very dry.

    Take the grouper steaks out of the fridge at least half an hour before cooking them.

    Line a baking pan with a sheet of parchment paper and place the grouper steaks on top.
    Season with a pinch of salt and a pinch of pepper.

    Wrap a handful of pistachios [or pine nuts or hazelnuts] in a sheet of parchment paper and, using a mortar or a meat tenderizer and cutting board, crush them into coarse pieces.

    Distribute the nuts over the grouper steaks.
    Add some parsley.

    Briefly preheat the oven.
    Bake at 356°F (180°C) in a fan oven for 20 minutes.

    Plate the dish.
    Drizzle with a bit of raw olive oil.

    Your baked grouper with pistachio crumble is ready.
