Baked Spicy Chicken | Light Skinless

The baked spicy chicken, golden on the outside and tender and juicy on the inside, is an appetizing version of the classic baked chicken.

Light, skinless.
I marinated the chicken thighs and drumsticks, skinless, with lemon juice – alternatively white wine – and seasoned them with a mix of herbs and spices.

Ingredients

Purchase the yellow chicken.
Choose medium-small chicken thighs and ask the butcher to separate them into thighs and drumsticks and remove the skin: chicken skin is very fatty, so it’s advisable to remove it before cooking.

  • 2 chicken thighs (yellow, skinless, separated into thighs and drumsticks)
  • q.b. lemon juice (or white wine)
  • q.b. mix of herbs and spices for roast
  • turmeric powder
  • dried red chili pepper (finely chopped)
  • mixed peppercorns (with grinder)

Preparation

  • 1. Store the raw chicken in a sealed container in the coldest part of the fridge at a temperature of 41°F max and avoid its liquids dripping onto other foods.

    2. Do not wash raw chicken: you might spread germs through water splashes.

    3. After touching the chicken, thoroughly wash utensils, surfaces, and hands with warm water and soap to avoid cross-contamination.

    4. Cook the chicken thoroughly.

    How do I know if the chicken is well cooked?
    Cut into the thickest part: the meat should have no pink traces, and the juices should be completely clear.

  • Place the chicken in a dish for marinating.
    Drizzle the chicken thighs and drumsticks with lemon juice or alternatively white wine.

    Season with:
    – a mix of herbs and spices for roast;
    plus additional spices you prefer:
    – turmeric;
    – red chili;
    – mixed peppercorns;
    and massage the thighs and drumsticks so that the seasoning is evenly distributed.

  • Cover the dish with plastic wrap or seal it inside a freezer bag and keep it in the fridge for at least an hour, making sure to turn the chicken pieces halfway through marinating.

    Remove the chicken from the fridge and proceed with cooking.

  • Line a baking sheet with parchment paper.
    Arrange the chicken thighs and drumsticks.
    Drizzle with the marinade.

  • Preheat the oven.

    Medium-small chicken thighs
    Bake in a fan-assisted oven at 356°F for 40 minutes and continue at 320°F for 20 minutes.

    Larger chicken thighs
    Bake in a fan-assisted oven at 392°F for 40 minutes and continue at 356°F for 20 minutes.

    – turn the chicken pieces;
    continue cooking for 5 minutes until evenly golden.
