Boiled Sicilian Broccoli Scramuzza or Scramuzzatura

Boiled Sicilian broccoli is the star of our winter table.

In particular, Sicilian broccoli is a variety of broccoli typical of southern Italy.
Green in color, among all the vegetables belonging to the Cruciferae family, it is the one we prefer to eat due to its less intense smell and more delicate taste.
In Sicily, or at least in the Ragusa area, we call it scramuzza or scramuzzatura.

As per family tradition, I prepare it boiled: in addition to being an excellent side dish, it is suitable for preparing numerous dishes: light and delicious Sicilian broccoli recipes [for which you can also use any other variety of broccoli].
For some recipes, I use only the tender part of the florets [and eat the crunchy part as a side dish].

Pay close attention when purchasing: choose small or medium-firm heads with bright green inflorescences, avoiding yellow and withered ones.

Ingredients

  • 1 head Sicilian broccoli
  • to taste water
  • 1 pinch salt
  • 1 pinch baking soda (to keep it a bright green color)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • Cut the broccoli into florets, cut through the stems with a knife.
    Place the florets in a colander and wash them thoroughly under running water.

  • In a pot, bring salted water to a boil.
    Add the broccoli florets and a pinch of baking soda to keep them a bright green color and let cook for about 8-10 minutes until tender without breaking apart.

    • With 8 minutes of cooking, you will get firm boiled broccoli;
    • With 10 minutes of cooking, you will get broccoli easily reducible to cream;

    With the help of a slotted spoon, gently remove the broccoli florets and transfer them to a container.

    Your boiled Sicilian broccoli is ready.
