Three main ingredients
Bresaola
is a cured meat made from salted and aged beef, rich in protein and low in fat. For its nutritional values, it stands out from most cured meats and is suitable for low-calorie diets.
Arugula
wild or cultivated, we prefer the cultivated variety with smaller, tender leaves and a less pungent flavor.
Grana Cheese
is a semi-fat, aged cheese, its lipid content is mainly unsaturated fats, which are considered good fats. It is highly digestible and naturally lactose-free.

In this simple dish, the quality of the ingredients makes all the difference, so choose them carefully!

  • This dish contains two protein sources: bresaola and grana cheese.
    Not all dietary plans allow for the combination of multiple protein sources.

    I manage it by halving the portion sizes of the individual protein sources:
    – half the portion of bresaola amount provided by the dietary plan;
    – half the portion of grana cheese amount provided by the dietary plan;
    per person or reduce the portion of bresaola and add a handful of grana flakes.

    Alternatively, I consume bresaola and arugula or grana cheese and arugula.

  • Select and wash the arugula leaves.
    Drain them in a colander.
    Gently pat them dry with kitchen paper.

    Gently separate the slices of bresaola and place them on the plates.
    Drizzle with lemon juice.
    Some say lemon juice slightly “cooks” the meat, we like it, add or omit it to taste.

    Spread the arugula over the bresaola slices.
    Drizzle with a little extra virgin olive oil raw.
    Distribute the grana flakes over the arugula and bresaola and grind the pepper.

    Plate.

    Your bresaola, arugula, and grana cheese is ready.

If any is left over, wrap and seal the plate with plastic wrap and store in the fridge, consume within 24 hours.
