Ingredients

  • bread
  • caciocavallo (Ragusano grated)
  • oregano
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil

  • Parchment paper

Preparation

  • I used ancient grain whole wheat bread.
    Preferably, but not necessarily, from the day before.

  • I used Ragusano caciocavallo.

  • Cut the bread into slices about 0.75 inches thick.

    On each slice, make deep diagonal cuts without reaching the base: the slice must remain whole.
    Gently widen the cuts, taking care not to break the slice.

  • Season with grated caciocavallo and oregano, gently filling the cuts as well.

  • Grind the pepper and drizzle with extra virgin olive oil.

  • Line a baking sheet with parchment paper and place the croutons with caciocavallo, oregano, and pepper on top.

  • Preheat the oven.
    Bake in a fan oven at 356°F for about 5 minutes or until the desired golden brown and crispness are achieved.

    Cool the croutons on a rack.

    Plate.

    Your croutons with caciocavallo, oregano, and pepper are ready.
