Eggs in tomato sauce or eggs in purgatory are eggs cooked in a pan with simple tomato sauce or flavored with garlic and red chili pepper.
A wholesome and tasty dish to enjoy with bread, preferably whole grain [the essential mopping up].
In Naples, they are called eggs in purgatory because the white eggs are immersed in the red tomato sauce, like souls immersed in the flames of purgatory.
Eggs are a food with high nutritional value.
Classification of eggs based on weight
• XL extra large: 73 g and above; • L large: 63 g to 73 g; • M medium: 53 g to 63 g: • S small: less than 53 g.
Consider one egg per person, sometimes I use two because they are small.
It is useful to know that washing eggs deprives them of their protective film, making their porous shell more easily attacked by bacteria.
So, if the shell is dirty, you can clean it dry [for example, with a sheet of kitchen paper] before storage and, only at the time of use, you can clean it with a damp sheet of kitchen paper.

Ingredients
- 2 eggs (4 if small)
- 1 pinch garlic powder
- 1 pinch red chili pepper (finely chopped)
- as needed tomato sauce (homemade)
- 1 pinch salt
- 1 pinch mixed grain pepper (with grinder)
- as needed parsley (chopped)
Tools
- 1 Pan non-stick
- 1 Lid glass
Preparation
For cooking the eggs, you need a non-stick pan.
Mine has a diameter of 11 inches.
If you like a tastier sauce:
In a hot pan, brown a sprinkle of garlic powder and a pinch of finely chopped red chili pepper.***
Pour the tomato sauce into the pan, season with a pinch of salt, and bring to a boil.
*The amount varies according to the diameter of the pan used.Crack the eggs into the pan, letting the white slide in first and then the yolk into the center of the white.
Let it cook with a lid on low flame for 4-6 minutes until the white is set and to the desired yolk consistency.
Grind the pepper and add the parsley.
Gently remove the eggs, being careful not to break them, and transfer them to the plate with the sauce.
Your eggs in tomato sauce or eggs in purgatory are ready.
