Fennel and Apple Salad with Dried Fruit and Cinnamon

The fennel and apple salad with dried fruit and cinnamon is a fruit salad: unusual, elegant, and tasty, it will conquer your guests.

Sweet and sour naturally, with lemon juice or vinegar and without added sugar.

Apples, present in our dietary scheme, are in the second group for sugar content in fruit.
I suggest choosing a crunchy and not mealy variety of apple.

In cases of hyperglycemia, prediabetes, and type 2 diabetes, it’s important to consider the portion of fruit, in this case, apples, and the entire meal in which it is included.

Fennel and Apple Salad with Olives, Almonds, and Cinnamon

Ingredients

  • 1 fennel
  • 1/2 apple (crunchy)
  • as needed dried fruit
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • as needed lemon juice (or vinegar)
  • 1 drizzle extra virgin olive oil (raw)
  • 1 pinch cinnamon powder
  • as needed chopped parsley

Suggested Tools

  • 1 Bowl or Salad Bowl
  • 1 Cutting Board
  • 1 Knife

Preparation

  • Thoroughly wash the fennel.
    Cut it first into wedges then into thin slices as needed.

    Thoroughly wash the apple, cut it into thin slices.

    Prepare a handful of dried fruit [from hazelnuts to walnuts, pine nuts to pistachios] and chop it coarsely with the help of a knife.

    Place in a bowl or salad bowl:
    • the fennel;
    • the apple.

    Season with:
    • a pinch of salt;
    • a pinch of pepper;
    drizzle with lemon juice or vinegar and a drizzle of oil and mix.

    Finish with:
    • cinnamon;
    • dried fruit;
    add the chopped parsley and mix.

  • Plate.

    Your fennel and apple salad with dried fruit and cinnamon is ready.
