The smoked salmon, fennel, and orange salad is a citrusy and crunchy salad.

The oranges, present in our dietary plan, fall into the second group for sugar content in fruit.
I suggest choosing from the blood oranges of Sicily: tarocco, sanguinella, valencia according to season and personal taste.
In case of hyperglycemia, prediabetes or type 2 diabetes, consider the portion of fruit, in this case, oranges, and the entire meal it is part of.
The new dietary plan provided by our nutritionist does not include fruit in meals so I adapted it to our needs by reducing the amount of orange and juice [fiber-free].

Ingredients
- 1 fennel
- 1 orange (1/2 whole and 1/2 juiced)
- 1 drizzle extra virgin olive oil (raw)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- smoked salmon (amount according to dietary plan)
- to taste parsley (chopped)
- 1 pinch red chili pepper (coarsely chopped)

Preparation
Wash the fennel thoroughly.
Cut it into wedges then into thin slices as needed.Wash the orange and divide it in half:
• half should be cut into wedges and each wedge cut in half;
• the other half should be juiced.
Remember that the juice is fiber-free, skip the addition if deemed necessary.Emulsify the orange juice with a drizzle of oil.
Season the fennel with salt and pepper and drizzle with the orange juice and oil emulsion.Gently separate the slices of smoked salmon and place them on the plates along with the fennel and orange.
Distribute the chopped parsley and coarsely chopped red chili pepper.
Drizzle with a bit of oil.Plate.
Your fennel and orange salad with salmon is ready.
