Ingredients

  • fennel
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 pinch red chili pepper (coarsely chopped)
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil (raw)

Preparation

You can grill fennel cut into slices or into wedges and thicker or thinner according to taste.

  • Clean the fennel: remove the stalk and outer leaves if damaged, wash them thoroughly.

  • Cut the fennel into slices approximately 1/4 inch thick.

    Heat the grill pan – ribbed grill – griddle.
    Grill the fennel slices on both sides.

  • Cut the fennel into wedges not too thick.

    Heat the grill pan – ribbed grill – griddle.
    Grill the fennel wedges on all three sides.

  • Plate up.

    Season with salt and pepper, coarsely chopped red chili pepper, chopped parsley, and a drizzle of raw oil.
