Preparation
Cheeses suitable for grill cooking are semi-hard or hard stretched-curd cheeses not too aged, for example:
• grilled tuma cheese;
• grilled primosale cheese;
• grilled caciocavallo cheese;
• grilled cacetto, caciotta, scamorza cheese.How to cook cheese on the grill?
• on a grill pan – grill – wide ribbed induction plate in petravera with parchment paper;
• on a non-stick pan with parchment paper.Cut the cheese into slices 0.4-0.8 inches thick.
Let’s proceed with the cooking:
Heat the grill pan – grill – induction plate or the non-stick pan.
Cut a parchment paper sheet to size [be careful not to let it protrude as it may burn].
Place the parchment paper sheet on the grill pan – grill – induction plate or on the hot non-stick pan.
Place the cheese slices on the parchment paper sheet.
As soon as the cheese starts to melt, turn the slices using a lasagna spatula or with a spoon and fork and continue according to the desired degree of melting.
The time it takes for the cheese to become golden and stringy depends on the freshness and/or aging and the thickness of the slices.Plate it up.
Grind the pepper.
Your grilled Ragusana provola is ready.
