Grilled Roasted Artichokes

The tasty and delightful grilled roasted artichokes are a delicious side dish.

You can serve them along with a variety of other delicious grilled vegetables.

Artichokes are low-calorie vegetables rich in fiber [inulin] and are particularly recommended in our diet.

Grilled Roasted Artichokes

Ingredients

  • 4 artichokes
  • to taste lemon juice
  • to taste water
  • 1 pinch salt
  • 1 small glass white wine
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste chopped parsley
  • 1 drizzle extra virgin olive oil

  • Griddle – grill – wide ribbed plate in petravera

Preparation

  • Wear a pair of disposable gloves to avoid having stained hands and nails.

  • • cut and remove the stems;
    • tear away the tougher outer leaves or bracts;
    • cut each artichoke in half vertically
    • drizzle the artichokes with plenty of lemon juice to prevent them from browning.

  • • bring salted water to a boil in a small pot;
    • add the artichokes, pour in the white wine, and cook with a preferably glass lid on low heat for 5 minutes;
    • remove the blanched artichokes;
    • transfer them to a plate on kitchen paper with the inner side facing down to drain.

  • On griddle – grill – ribbed plate
    Grill the outer part of the artichokes first.
    Check the degree of cooking and the presence of the classic grill marks.
    Turn the artichokes to grill the inner part and wait until fully cooked.

    Plate.
    Season with a pinch of salt and grind the pepper, add the chopped parsley and drizzle with extra virgin olive oil.

    Your grilled roasted artichokes are ready.

  • … should you have the grill available:
    • cut the stems leaving a couple of inches;
    • wash the artichokes and then let them drain;
    • hit them on a surface so the leaves spread out;
    • season the inside with a pinch of salt;
    • place the artichokes on the grill standing on the stem side;
    • drizzle them with some oil;
    • let the artichokes cook for 15-20 minutes, tasting the leaves to check for doneness.

    Remove the outer leaves that are dirty with grill marks and charred.
