Ingredients
- 5.6 oz penne rigate
- 1.8 oz stracchino (light)
- 1 fl oz water (or a little more)
- 1 pinch mixed peppercorns (with grinder)
- smoked salmon (weight as per dietary plan)
- 1 pinch garlic powder
- 1/2 shallot
- 4 parsley stems
- 1 shot white wine
- to taste chopped parsley

Preparation
In a bowl, pour:
• 50 ml of light stracchino;
• 25 ml of water;
• the pepper;
and whisk vigorously with a fork until you get a homogeneous sauce.
The consistency should be like cooking cream; if it is thick, add a few more ml of water and blend.Separate the slices of smoked salmon and chop them coarsely with a knife.
In a pan, heat a sprinkle of garlic powder, half a shallot, and a few parsley stems to flavor.
Deglaze with a shot of white wine.
Using kitchen tongs, remove the shallot and parsley stems from the pan.Add the salmon, stir, and sauté until it changes color evenly without overcooking it as it will be heated later.
Cook the pasta, rinse it under running water, and drain it.
Meanwhile, heat the salmon.
Pour the pasta into the pan with the salmon and mix.With the flame off, add the light stracchino, chopped parsley, and mix to combine.
Plate.
