Light Baked Pleurotus Mushrooms

The light baked pleurotus mushrooms cooked without oil are a light and tasty side dish.

For this recipe, I recommend using meaty mushrooms like pleurotus mushrooms [Pleurotus Ostreatus] or alternatively cardoncelli mushrooms [Pleurotus Eryngii].

I drizzled the mushrooms with lemon juice.

Are mushrooms vegetables?
Mushrooms are not plant-based organisms so they are not vegetables, but due to their nutritional characteristics, they are often considered similar to vegetables.
They are low in calories, high in water, and have a good fiber content; we consume them once a week, at most twice [as recommended].

Ingredients

  • 8.8 oz pleurotus mushrooms
  • to taste lemon juice
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)
  • 1 red chili pepper (coarsely chopped)
  • to taste parsley (chopped)

Preparation

  • As for cleaning: despite various opinions, mushrooms should always be washed and dried thoroughly before use.

    I personally adjust according to the type and degree of cleanliness: I usually buy them in a tray and they are always quite clean, possibly I rinse them under running water paying particular attention to the space between the gills [laminae arranged under the cap] and the usually earthy stem, then let them drain in a colander.
    In the case of field or champignon mushrooms, I peel the mushroom cap with the help of a small knife.

  • Pleurotus mushrooms grow on trees or are cultivated in bags, so they do not have soil residues and therefore do not need cleaning.
    Otherwise, rinse the mushrooms under water and dry them with a sheet of kitchen paper.

  • Line a baking sheet* with a sheet of parchment paper.
    * wide, mushrooms should not overlap.

    Arrange the mushrooms on the baking sheet with the stem side facing up in a single layer to avoid overlapping.

    Drizzle the mushrooms with lemon juice.
    Season with a pinch of salt and a pinch of pepper.

    Briefly preheat the oven.
    Bake at 356°F for 20 minutes in a fan oven.

    Plate them.
    Drizzle with a little raw oil, add parsley, red chili pepper, and grind a bit more pepper.

    Your light baked pleurotus mushrooms are ready.
