Ingredients

The chickpeas : pumpkin ratio is 2:1.

  • cooked chickpeas, boiled (or canned chickpeas for 2 people)
  • pumpkin (pulp)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste turmeric powder
  • to taste breadcrumbs (or whole wheat breadcrumbs)
  • 1 dash extra virgin olive oil (raw)

Preparation

Recommended portions according to healthy eating guidelines
– fresh, soaked, or canned legumes: 150 g;
– dry legumes: 50 g.

Portion sizes are always personal.

  • Prepare the chickpeas following the procedure described in Cooking chickpeas in a pressure cooker | easy and digestible basic recipe or, if you already have them in the freezer, defrost a double portion.

    Alternatively, use pre-cooked canned chickpeas.
    Remember to rinse them well under running water: canned legumes often contain additives, salt, and sometimes sugar.
    Among packaging types, glass containers are preferred over tins as they are less prone to spoilage.

  • Drain the chickpeas.

  • Wash the pumpkin.
    Cut it into slices.

    Line a baking sheet with a sheet of parchment paper.
    Arrange the pumpkin slices in a single layer.
    Season with a pinch of salt and grind the pepper.

    Preheat the oven.
    Bake in a ventilated oven at 356°F for 20 minutes.

  • The chickpeas : pumpkin ratio is 2:1.
    I used 400 g of cooked chickpeas and 200 g of cooked pumpkin.

    Pour into the mixer:
    – chickpeas;
    – pumpkin;
    – salt;
    – pepper;
    – turmeric;
    and coarsely blend.

  • Once you have the chickpea mixture, you can shape it as you like: patties, cutlets, and burgers.

    Take two tablespoons of mixture for each burger, shape with your hands, and gently coat with breadcrumbs or whole wheat breadcrumbs.

    To make uniform burgers, you can use a cookie cutter or burger press.
    You can vary the size and shape to your taste: burgers and mini burgers.

    If you have time, let rest in the fridge for an hour before cooking.

  • You can cook your chickpea and pumpkin burgers in the oven or in an air fryer or even in a pan.

    Oven cooking
    Line a baking sheet with a sheet of parchment paper.
    Arrange the chickpea and pumpkin burgers.

    Preheat the oven.
    Bake in a ventilated oven at 392°F for 10 minutes until golden.
    For a crispier and more golden surface: remove from the oven, spray or drizzle with a dash of extra virgin olive oil and complete the cooking with 4 more minutes on grill function at the top of the oven.

  • Air fryer cooking
    Follow the instructions – program, temperature, and times – indicated in the manual of your appliance.
    Check the degree of cooking from time to time.

  • Remove the chickpea and pumpkin burgers by gently detaching them from the base.

    Plate.

  • Cutlets or burgers also in a pan
    Grease the surface of a non-stick pan with a lightly oiled paper towel and heat.
    Cook over medium heat for 3-4 minutes on each side, until golden.
    Handle gently with the help of a spatula for lasagna.

  • Flavor the chickpea and pumpkin burgers with a dash of raw oil, a sprinkle of pepper, and fresh parsley.

    They are excellent with light sauces.
    Serve the chickpea and pumpkin burgers with:
    Greek yogurt sauce or dressing.
