This is the story of a snack created for a special afternoon when a Clumsy Fairy tells children the tale of Gaudio the Clumsy Baker who teaches to believe in oneself and to have patience.
Serve also as mini panettone at Christmas and mini colombe at Easter.

Ingredients
- 3/4 cup tritordeum flour
- 3/4 cup spelt flour
- 8 tablespoons dark chocolate chips
- 1/2 packet baking powder (8 g)
- 1 cup water (or milk or plant-based milk)
- 3 tablespoons sunflower oil
I used tritordeum flour and non-wholemeal spelt flour for a soft result suitable for children.
What can I substitute tritordeum flour with?
• with re-milled durum wheat semolina or use entirely spelt flour;
• with the low glycemic index mix [molino spadoni] if you want to achieve a low glycemic index dough;
considering that the impact on blood sugar can be different.
• Semolina and flours glycemic index type 2 diabetes.

Preparation
Pour into a bowl:
• tritordeum flour;
• spelt flour;
• dark chocolate chips;
• sifted baking powder;
and mix with a silicone spatula.Pour into a graduated measuring cup:
• water [or milk or plant-based milk];
• oil;
and quickly emulsify the two liquids.Transfer the liquids into the bowl with the dry ingredients and mix with a silicone spatula until you get a smooth and lump-free batter.
Prepare muffin molds [I used 9+9] and place them on the baking tray that will go into the oven.
Divide the batter into the molds: about a tablespoon or a 15 ml scoop per mold.
Distribute any remaining batter among all the molds.Briefly preheat the oven.
Bake at 350°F for 5 minutes in a fan-assisted oven.
Lower the temperature to 330°F and let it cook for another 30 minutes.
Temperatures and times may vary from oven to oven.Turn off the oven and let the buns or muffins rest for a few minutes before taking them out of the oven.
Your buns with chocolate chips without butter, milk, and eggs are ready.
