Light Creamy and Delicate Salmon and Stracchino Pasta

The light salmon and stracchino pasta, prepared with smoked salmon, is a creamy and delicate dish.

About smoked salmon
Compared to fresh product, smoked salmon contains:
– more salt;
– more proteins;
– less fat, but this also means fewer essential fats – omega 3;
and is a valid alternative to fresh salmon.
Preserved fish – smoked fish, mackerel, and canned tuna – should be consumed occasionally.

Prediabetes and cheese
Cheese should be consumed no more than twice a week, in small doses, preferring fresh cheese to aged ones.
Stracchino is among fresh cheese, and in this recipe, I chose the light version and used just enough to make the pasta creamy without making it heavy.

Ingredients

  • 5.6 oz rigatoni
  • 1.8 oz stracchino (light)
  • as needed water (about 1 oz or slightly more)
  • 1 pinch mixed peppercorns (with grinder)
  • smoked salmon (weight according to dietary plan)
  • 1/2 shallot
  • 1 pinch garlic powder
  • 4 stems parsley
  • 1 small glass white wine
  • as needed chopped parsley

Preparation

  • In a small bowl pour:
    – 50 g of light stracchino;
    – 1 oz of water;
    – a pinch of pepper;
    * smoked salmon is naturally salty, so no need to add salt;
    and vigorously mix with a fork until you get a smooth and homogeneous sauce.

    The consistency should resemble that of cooking cream, if too dense add a few more ml of water and mix.

  • Separate the slices of smoked salmon and coarsely chop them with a knife.

  • Peel the shallot and remove the ends.

    In a pan, heat a sprinkle of garlic powder, the shallot, and a few stems of parsley to flavor.
    Splash with a small glass of white wine.

    Remove the shallot and parsley stems from the pan.
    Add the salmon, stir and briefly brown until it changes color evenly but without overcooking.

    Cook the pasta until al dente, drain it, and quickly rinse under running water.
    Meanwhile, heat the salmon.

    Place the pasta in the pan with the salmon and stir.
    Off the heat, add the light stracchino cream and stir to blend.

    Plate.
    Grind a little more pepper and add chopped parsley.

    Your light salmon and stracchino pasta is ready.
