Ingredients
- 160 g rigatoni pasta
- 50 g stracchino (light)
- 2 tbsps water (or slightly more)
- 1 pinch mixed peppercorns (with grinder)
- smoked salmon (portion according to dietary plan)
- 1 pinch garlic powder
- 1/2 shallot
- 4 stems parsley
- 1 shot white wine
- to taste chopped parsley

Preparation
In a small bowl, pour:
– 50 g of light stracchino;
– 2 tbsps of water;
– a pinch of pepper;
and vigorously emulsify with a fork until you obtain a smooth and homogeneous sauce.The consistency should resemble that of cooking cream; if it is too thick, add a few more milliliters of water and mix.
Separate the slices of smoked salmon and chop them roughly with a knife.
In a pan, heat a dusting of garlic powder, half a shallot, and a few parsley stems to flavor.
Splash with a shot of white wine.Remove the shallot and parsley stems from the pan.
Add the salmon, stir, and briefly brown until it changes color evenly but without overcooking it.Cook the pasta, rinse it under running water, and drain it.
Meanwhile, heat the salmon.
Pour the pasta into the pan with the salmon and stir.
With the heat off, add the light stracchino cream, the chopped parsley, and mix to blend.Plate it.
Grind a bit more pepper.Your light salmon and stracchino pasta is ready.
