- 3.5 oz cow's ricotta
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)

If the prawns are frozen, let them defrost completely until they are soft: it will be easier to clean them without breaking.
Clean the prawns.

Shell the prawns.
Then:
– with a sharp knife, make an incision along the back of the prawn;
– with a toothpick or the tip of the knife, extract the black thread.
Rinse the shelled prawns thoroughly under running water.
Let them drain.
Pat the residual water with kitchen paper.
Boil the shrimps
Bring salted water to a boil in a small saucepan.
Add the shrimps and cook for 2-3 minutes.
Remove the shrimps with a slotted spoon, transfer them to a plate and let them cool.Prepare the light pink sauce or light cocktail sauce without mayonnaise and without ketchup.
Pour into the mixer:
– the ricotta;
– a pinch of salt;
– a pinch of pepper;
– a pinch of nutmeg or other preferred spice;
and blend.Add the tomato sauce – one tablespoon for every 3.5 oz of ricotta – and blend until smooth and homogeneous.
The ideal density is that of mayonnaise, creamy but compact.
For the green part of the salad, you have a wide choice among the many types of lettuce, including lettuce, arugula, lamb’s lettuce, or valerianella.
Select and wash the leaves.
Let them drain in a colander.
