The recipe for low glycemic index fritters with ricotta dough is simple.
I used the low glycemic index mix from Molino Spadoni.
These are fritters without butter, milk, and eggs, using ricotta.
They are sugar-free fritters, with only a few drops of liquid sweetener added to the ricotta.
Light, crispy, and with some bubbles!
These carnival fritters are also known as bugie, crostoli, frappe, or cenci.

They are not thin and bubbly like traditional fritters.
Consider that:
– the dough is very elastic and generally difficult to roll out very thin!
– frying is one of the factors that helps form bubbles and our fritters are baked;
– the alcoholic component contributes to bubble formation and our fritters are alcohol-free.
* folding and passing the dough several times can create some bubbles.
Pour into the mixer:
– the ricotta;
– the liquid sweetener or your usual sweetener;
and blend until smooth.Pour into a bowl:
– the low glycemic index flour;
– sifted baking powder;
– the ricotta blended with sweetener;
– lemon or grated orange zest;
and start mixing the dough with a silicone spatula.Continue kneading until the ricotta and flour are well combined and the dough is elastic.
Roll it out with a rolling pin or a pasta machine – Nonna Papera – to a thickness of 0.2-0.4 inches.
Fold and roll out, repeat 2-3 times, then proceed with the final rolling.* folding and passing the dough several times can create some bubbles.
The thinner your fritters, the crispier they will be.
Cut out your fritters or streamers using cookie cutters or a pastry wheel or a lattice cutter.
Re-knead the scraps and cut more fritters until all the dough is used up.
Line a baking tray with parchment paper and place the fritters on it.
For a more fried-like effect, brush with a little extra virgin olive oil or sunflower oil.
Preheat the oven.
Bake in a fan oven at 356°F for about 15-20 minutes until evenly golden.
* time and temperature may vary depending on the oven and thickness of the fritters.Remove from oven and let cool before serving.
Your low glycemic index baked fritters are ready.
Enjoy!
Finish with a sprinkle of erythritol powder – zero calories – or icing sugar and cinnamon, or cover with melted dark chocolate.
