Meatballs without Eggs in Air Fryer

Meatballs without eggs in air fryer are crispy and golden like the classic fried meatballs that grandmothers and moms prepare, but digestible and light.

I prepared my meatballs with a mixture of lean ground beef and pork flavored with whole wheat breadcrumbs and parmesan, without eggs and cooked them in an air fryer.
Alternatively, you can use ground chicken breast or turkey breast.

Tasty, they are a delight for both adults and children.

Serve them plain or accompanied with homemade tomato sauce.

If you don’t have an air fryer you can cook them in a pan.

Egg-Free Meatballs in Air Fryer

Ingredients

  • 8 oz lean ground beef and pork (lean)
  • 3 tbsp whole wheat breadcrumbs
  • 3 tbsp Parmigiano Reggiano cheese (grated)
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste parsley (chopped)
  • 1 drizzle extra virgin olive oil
  • to taste tomato sauce (homemade)

Tools

  • 1 Air Fryer

Preparation

  • In a bowl, add:
    • the ground meat;
    • the whole wheat breadcrumbs;
    • the grated cheese;
    • garlic [optional];
    • salt;
    • pepper;
    • parsley;
    and mix the ingredients.

  • Prepare a flat plate or tray.

  • To make meatballs as even as possible, I use a 7.5 g or 15 g measuring spoon depending on the desired size.

  • With your hands, form balls, press them slightly [they will be crunchier], and arrange them on the plate or tray.

  • Grease your hands with a little olive oil and pass each meatball through your hands.

  • Cooking in Air Fryer

    Follow the instructions [temperature and time] indicated in your appliance’s user manual.

    Procedure with my Ariete Air Fryer – Fry Healthy [Eurospin]:
    • set the temperature to 356°F;
    • preheat for 5 minutes;
    • pour a drop of oil on a paper towel and grease the grill accessory;
    • remove the basket, place the grill accessory inside, and arrange the meatballs on top;
    • cook for 7 minutes;
    • remove the basket;
    • gently turn the meatballs over;
    • continue cooking for another 7 minutes.

  • Remove the basket, check the cooking, and if desired, extend until the desired crispness and golden color are achieved, shaking the basket or turning the meatballs if and when necessary.

  • Your meatballs without eggs in air fryer are ready.
