Mini Light Puff Pastry Croissants

The mini light puff pastry croissants are easy and quick finger food to prepare.

Fats can cause a rise in blood sugar hours after a meal, which might mean normal blood sugar levels 2 hours later but a peak at 4-6 or even 8 hours.

However, for holidays [Christmas and New Year’s for example] and special occasions [Valentine’s Day and Ferragosto for example], I like to use puff pastry to create crispy and appetizing entrees:
• perfect for decorating the table [as place markers or as a welcome];
• tasty to eat;
mini and no more than a couple per person considering the premises.

  • 1 roll fresh light puff pastry (30% less fat, round base)

  • Take the light puff pastry out of the fridge.
    Gently unroll the puff pastry base.

    Decide the size of your mini croissants and cut the puff pastry into wedges or long, thin triangles: the longer and thinner the wedges or triangles, the more delicate they are to handle, but the result is delicious!

  • • cut the round base into 4 wedges;
    • continue cutting each wedge in half [total 8 croissants];
    • continue cutting each wedge in half [total 16 croissants];
    • continue cutting each wedge in half [total 32 croissants].

    I usually prepare 32 croissants for each round base.
    The longer and thinner the wedges are, the more delicate they are to handle, but the result is delicious.

  • • cut the rectangular base into strips about 1.2 inches wide;
    • cut each strip [from the top left corner to the bottom right corner] to get two long and thin triangles.

  • Line a baking tray* with a sheet of parchment paper.
    *wide, the puff pastry croissants should not be stacked.

    Place the mini light puff pastry croissants on the baking tray as you roll them to avoid handling them multiple times.

    Place your ingredient in the widest part: for example, anchovies [well-drained if in oil], olives, or sun-dried tomatoes.
    Roll each wedge or triangle starting from the widest side to the thinnest point.

    Place your sweet ingredient in the widest part: for example, a piece of dark or extra-dark chocolate.
    Roll each wedge or triangle starting from the widest side to the thinnest point.

    Brush the wedges or triangles with a thin layer of fruit-only jam.
    Roll each wedge or triangle starting from the widest side to the thinnest point.

  • If you like, grind pepper or sprinkle a handful of sesame or poppy seeds over the croissants [some or all], pressing slightly to adhere.

  • Preheat the oven briefly.
    Bake at 356°F in a fan-forced oven for 15-20 minutes, according to the desired level of browning.
