Oven-baked Boneless Lamb Leg

The lamb leg is among the most prized cuts, deboned and sliced it is an alternative to lamb chops: less bones and more meat.
I seasoned the lamb meat before cooking to enhance its flavor and soften its fibers but without marinating that is without any liquid emulsion [oil, vinegar or lemon juice, beer or wine].
A mix of herbs and spices for roasting will be enough to enjoy tender and juicy meat without altering its flavor.
Of course, if you like, you can season your meat with fresh aromas: juniper, oregano, parsley, rosemary, sage, thyme, and spices.

Preparation

  • At least an hour before cooking take the lamb leg slices out of the fridge.
    Season the lamb leg slices with a mix of herbs and spices for roasting.

    Place the seasoned lamb leg slices on a flat and wide plate without overlapping them and seal with plastic wrap.
    Let it rest out of the fridge for at least an hour.

  • After at least an hour you can proceed with the oven cooking.

    Line a baking tray with parchment paper.
    Arrange the lamb leg slices on the tray.

    Preheat the oven briefly.
    Bake at 356°F in a fan oven for about 40 minutes.
    Cooking times may vary depending on the thickness of the slices.

    Plate.
    Grind the pepper and drizzle with extra virgin olive oil.
