Oven-Baked Frittata with Fennel without Cheese

Today we use our eggs to prepare a light fennel frittata: oven-baked frittata with fennel without cheese.

The fennel frittata is extraordinarily light yet tasty.
The fennel is added raw, making the preparation simple and quick.

To avoid frying, I prepare the frittata in the oven.

I don’t add cheese to the egg because I don’t like the combination between the two foods.

Consider one egg per person; sometimes I use two because they are small size.
It will be useful to know that washing eggs removes their protective coating, making the shell, porous, more easily attacked by bacteria.
Therefore, if the shell is dirty, you can clean it dry [for example with a kitchen paper towel] before storage and only at the time of use, you can clean it with a damp kitchen paper towel.

Oven-Baked Frittata with Fennel without Cheese

Ingredients

  • 4 eggs
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • as needed fennel
  • 1 pinch red chili flakes (coarsely chopped)
  • as needed parsley (chopped)

Tools

  • Cake Pan 9.5 inches
  • Parchment paper

Preparation

  • Thoroughly wash the fennel.
    You might need one or half, depending on the size.
    Cut it in half lengthwise.
    Slice each half vertically.

  • Break the eggs and pour them into a bowl.
    Add a pinch of salt for each egg and grind the pepper.
    Beat everything with a fork.

  • Line a baking dish with a crumpled sheet of parchment paper; I used a 9.5-inch pastiera pan.

  • Distribute the fennel slices on the base of the dish.

    Season on top with a pinch of salt and pepper, coarsely chopped red chili flakes, and parsley.

  • Pour the mixture over it.

  • Briefly preheat the oven.

  • Bake at 356°F for 30 minutes in a fan oven until evenly golden.

  • Plate it up.
