The oven-baked meat and arugula balls light are exquisite, if you love arugula, you must try them.
I made my meatballs with mixed minced beef and pork [ask for lean], alternatively, you can use minced chicken breast or turkey breast.
• I don’t add eggs;
• I don’t add milk;
• I add whole wheat breadcrumbs;
• I add grated parmesan.
I added chopped arugula to the base ingredients.
The arugula can be of two types: wild and cultivated.
For this preparation, I recommend using cultivated arugula with smaller and more tender leaves, so as not to strain the mixer blades, and with a less pungent flavor.
They are delicious dressed with lemon juice.

Ingredients
- 8 oz lean mixed minced beef and pork (lean)
- 1 tbsp whole wheat breadcrumbs
- 1 tbsp parmesan cheese (grated)
- 1 pinch garlic powder (optional)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 1.5 oz arugula (more or less to taste)
- to taste lemon juice

Preparation
For this preparation, I recommend using cultivated arugula with smaller and more tender leaves, so as not to strain the mixer blades, and with a less pungent flavor.
Select and wash the arugula leaves.
Drain them in a colander.
Dry them on a paper towel.In a bowl, combine:
• the minced meat;
• whole wheat breadcrumbs [one 15 g scoop or 1 heaping tablespoon];
• the grated cheese [one 15 g scoop or 1 heaping tablespoon];
• garlic [optional];
• a pinch of salt;
• a pinch of pepper;
• the chopped arugula;
and mix the ingredients.Shape the meatballs:
• balls for baking or cooking in sauce;
• slightly flattened balls for frying pan or air fryer cooking;
and place them on a plate or on a cutting board or on a tray.To get evenly sized meatballs, I use a 7.5 g or 15 g scoop according to the desired size.
You can cook your arugula meatballs without eggs in the oven or air fryer, in a pan, or in sauce.
Note
Since this is a preparation based on minced meat, it must always be well-cooked and never rare to avoid the risk of foodborne illnesses from pathogenic microorganisms.
On a steak, any contamination remains superficial and is eliminated during cooking.
For this reason, you can eat a steak rare or undercooked.
In preparations based on minced meat, contamination can spread inside.
Therefore, when consuming hamburgers, meatballs, or other dishes based on minced meat, it is important that the cooking is complete and there are no pink or undercooked areas.Oven Cooking
• bake at 350°F for 20 minutes in a ventilated oven.Air Fryer Cooking

• coat the meatballs on all sides with some extra virgin olive oil using a silicone brush and cook in a non-stick pan for a few minutes on each side + a few minutes with the flame off and a lid on.Cooking in Sauce
