Pasta alla Puttanesca [olives capers and anchovies]

The whole wheat pasta alla puttanesca is a typical first course of Italian cuisine linked to the Neapolitan tradition, of which there is also a Roman version.

For the preparation of my light puttanesca sauce I used:
tomato sauce [instead of fresh tomato + concentrate] for a more digestible and lighter result;
and added:
• black olives;
• capers;
• anchovies.

It is a spicy and lively condiment, thick and tasty.
Excellent on spaghetti, try it on fish steaks [from swordfish to salmon to tuna].

It seems that the name is linked to a brothel where the dish would have been born or from which it would have taken inspiration.

Whole wheat pasta alla puttanesca

Ingredients

  • 5.6 oz whole wheat spaghetti
  • to taste salted capers
  • 2 fillets anchovies (drained)
  • 12 black olives
  • 0.07 oz garlic oil & chili mix
  • 7/8 cup tomato sauce (homemade)
  • 1 pinch mixed peppercorns (with grinder)
  • to taste parsley (chopped)
  • 1 drizzle extra virgin olive oil (raw)

Tools

  • 1 Pan non-stick

Preparation

  • Rinse and squeeze a handful of capers.
    Drain the anchovies well and let them dry on a sheet of kitchen paper.
    Drain the black olives.

    Heat the garlic, oil & chili mix in a hot pan.
    Turn off the heat.

    Add the anchovies and break them up with a silicone spatula.
    Add the tomato sauce.

    Turn on the heat.
    Add black olives and capers to the pan and mix.
    Let it cook over low heat for 3-5 minutes with a lid to prevent splashes until the sauce becomes thick.
    Turn off the heat.

    Grind the pepper.

    Cook the pasta, rinse it under running water and drain it.
    Meanwhile, heat the sauce.

    Pour the pasta into the pan with the sauce and mix.
    Off the heat, add the parsley and a drizzle of extra virgin olive oil.

    Plate it.

    Your whole wheat pasta alla puttanesca is ready.
