Pasta with Sicilian Broccoli or Scramuzza

The pasta with Sicilian broccoli is a warm, healthy pasta and broccoli soup.

The main ingredient is the Sicilian broccoli, a type of broccoli typical of southern Italy with a delicate flavor.
In Sicily, or at least in the Ragusa area, we call it scramuzza or scramuzzatura.

A soup to be enjoyed plain or colored with a bit of tomato sauce or with chopped tomatoes according to taste.
… and with broken spaghetti that I have chosen whole wheat.

In the case of brothy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the prepared brothy sauce separately; in this way, the starch released from the pasta in the cooking water is eliminated.

Ingredients

  • 4.2 oz whole wheat spaghetti (broken)
  • 1 head Sicilian broccoli
  • as needed water
  • 1 pinch salt
  • 1 pinch baking soda (to keep it a bright green)
  • 1 2/3 cups water
  • 1 pinch salt
  • 1 vegetable stock cube (homemade)
  • as needed tomato sauce (homemade)
  • 1 pinch mixed peppercorns (with grinder)
  • 1 drizzle extra virgin olive oil (raw)

Preparation

  • Sicilian Broccoli
  • Cut the broccoli into florets, score the stems with a knife.
    Place the florets in a colander and rinse them thoroughly under running water.

  • In a pot, bring salted water to a boil.
    Add the broccoli florets and a pinch of baking soda to keep them a bright green and cook for about 8-10 minutes until tender but not falling apart.

    • With 8 minutes of cooking, you’ll get firm boiled broccoli;
    • With 10 minutes of cooking, you’ll get broccoli easily reduced to cream;
    … decide according to taste.

    Using a skimmer, gently remove the broccoli florets and transfer them to a container.

    Save the broccoli cooking water for cooking the pasta.

  • In a casserole, pour:
    • 1 2/3 cups of water;
    • a pinch of salt;
    • a vegetable stock cube;
    • as needed tomato sauce or chopped tomatoes;
    mix and adjust salt if necessary.

    Bring to a boil and add the boiled broccoli.

    Cook the pasta in the broccoli cooking water if you saved it, rinse it under running water and drain.
    In the case of brothy first courses, to avoid glycemic spikes, it is advisable to cook the pasta separately, then rinse it and add it to the prepared brothy sauce separately; in this way, the starch released from the pasta in the cooking water is eliminated.

    Bring the broth with broccoli back to a boil.
    Pour the pasta into the casserole with the broth and broccoli and mix.

    Plate.
    Grind the pepper.
    Add a drizzle of raw olive oil.

    Your pasta with Sicilian broccoli or scramuzza is ready.
